    Haven’t tried pickled carrots but I absolutely love pickled onions! The next time you’re making refrigerator pickles, try asparagus spears and green beans. They both make a really good Bloody Mary garnish.

    I totally like to season red onions with sumac. Makes a great flavor, even raw on burgers. Red onions, a little sumac and you have a perfect result.

    Qdoba has had pickled red onions on their menu for the past year or so and they are SO delicious. I've been meaning to look up a recipe so I can make my own. Looks amazing, I'll have to try it!

    Those both look great! I LOVE pickled carrots and your reaction says it all. I have never made them myself so I’ll need to try it! I have been making a lot of pickled onions recently and I got a tip from my local brewery who puts in a bit of red wine vinegar which is a nice variation as well. Maybe I should make this carrots right now. Haha.

    Awesome! Have you experimented with cutting the onion longitudinally as opposed to making rings that are cut across the equator? I started cutting longitudinally and won’t go back to the other way. The texture is much different. There’s more snap to the onion and it’s much firmer once it’s been pickled.

    I pickle onions all the time. A couple of thinly sliced habanero peppers a mandatory ingredient.

    Will try the carrot. In Mexico we make the onions with habanero and whole pepper ( best with pepper corns from Yucatan). Instead of Tajin.
    Great to eat with about any thihg

    Next time try this recipe for the onions. Add habanero thinly sliced, lime juice, pinch of Mexican oregano, salt to taste Lmk how it tastes it’s delicious

    Tajin for my 3 yo son is "my jin" and he loves it on everything. It's usually my base rub on my chicken and flank steak for tacos. The onions look delicious and Robertito would probably even be willing to try them since they have his jin on them.

    Do you need the sugar? (Not thinking of sugar substitutes, just leave out the sweetener completely)
    Can one use any other type of vinegar (apple cider vinegar? rice vinegar?, etc?)

      I cut two fingers, taking it out of the box I store it in so no one cuts themselves when it's stored.🫤

      @@CookingWithRy OK so they stay like a lullaby of a crunchyness to them I'm one I don't like soft onions lol soft carrots i don't mind Thinking about trying to do them

      @@jeremymcmichael7371 The carrots especially retain crunchiness while softening a bit. For me they're usually gone within a week or so so there's not much time for them to get too mushy :)

    So I made your Mexican onions and then I made them with ginger root my daughter loved them I obviously put too much ginger root in it but they were great my question is can we do a quick pickling Asian inspired with ginger root and soy sauce

      I was thinking about adding a third of a cup of soy sauce or maybe teriyaki sauce to the brain

      You can do this with cucumbers, soy sauce&vinegar to taste. If it is too salty or vinegar add little brown sugar to tone it down. We always have a jar in our fridge. They get stronger in flavor over time. We haven't tried ginger so I don't know about it and soy.

    The carrots... We call them "Firecrackers." You can adjust to taste... I like them spicier, so I tend to cut the carrot sticks a bit thinner, and I increase the heat by using more pepper flakes.

      Oh yeah... At a recent Farmers Market, I saw a lady selling pickled red onions for 8 Bucks/Quart! I thought it was kinda funny, buy I admired her hustle!

    YOu should slice them pole to pole too, because the onion's cells run pole to pole, so slicing them pole to pole breaks less of the onion's cells and leaves more onion flavor.

    You don't taste the onions, you taste the bread and cheese THEN the onions! You never know what it tastes like..

    Onions are being cut against the grain. Should never cut onions against the grain unless making onion rings. Texture is improved when cut correctly. Cheers guys.

      This is pretty common for pickled onions. There are no absolutes.
