    Bonjour Everyone!
    In this video I’m showing you the simplest way to prepare Haitian Fried Goat also known as Taso Kabrit.
    I’m using fresh goat meat from my local grocery store from the meat department, I typically use goat leg cut.
    I start by trimming down the fat and slicing the meat through the thickest parts to ensure the meat cooks evenly and quickly.
    I thoroughly clean my meat with salt, white vinegar, lemons, limes and sour orange. Begin thoroughly rinsing with warm water. Then I boil water using the same lemons and pour it all over the meat and let it sit for at least five minutes.
    Side note: the darker the color of the meat, the more aged it was when butchered. If your meat is a deep red color, it’ll take longer to cook. Sometimes I’ve let the goat marinate in boiling water for 15 minutes or longer. Then you thoroughly rinse out the meat with warm then cool water until all the seeds and lemon zest and salt are washed off.
    Using a separate bowl, transfer all the meat and begin seasoning. I use Haitian Epis - Neguess Creole brand. Thoroughly mix and blend the seasoning, then you can let it marinate for a few hours or begin cooking immediately.
    In a large pot, place the temperature on medium high and add olive oil, then spoon in the meat. Add a few cups of water, just enough to cover the bottom of the meat (1 inch high) and let it steam for 20 minutes. Then check on your meat again, adding more water and let it steam for 45 minutes or more.. keep checking on the meat to ensure that meat doesn’t dry up and begin to burn the pot. Always add a little more water and let it steam until the meat is fork tender. It should be easy to chew.
    To fry the meat, I then place the goat in cooking oil set to 350 degrees for 3-5 minutes, depending on how hard I want it fried.
    Voila! This goat meat is ready to eat as is. I paired it with some delicious Fritay 🇭🇹
