Quick and easy recipe and clean up. I didn’t even have all the ingredients and it still tasted great!! This is a winner thank you!!!!! 😊

Just made the base recipe in the oven - the whole family (nonketo) loved it. Such a good flavor and texture. I haven’t had a meatball in ages before this - love keto. Gotta try the Asian ones next week. To get 165 degrees my meatballs needed about 20 minutes. Since it’s pork it’s good to have a meat thermometer on hand just to be sure.

I love meatballs - yesterday I made a double recipe of Italian and divided it into meatballs and one meatloaf to freeze for meals this week. Today I made spaghetti using shirataki noodles and Rao marinara sauce. OMG so delicious! The noodles were a surprise - never knew they even existed before watching KetoFocus. I sauteed them in grass-fed ghee, then added Rao marinara sauce and let the flavors blend while the meatballs were in the air fryer. So tasty and filling! I'm definitely going to experiment with the noodles. I really liked the texture and flavor.
I live in Japan, home of Panko, but we don't have Pork Panko lol I found blitzing crispy bacon in a food processor nearly to a powder gave a similar "lightness" to the meatball as traditional bread crumbs though.

Last time I crushed my pork rinds in a plastic bag but this time I’ll be using my food processor. I can just imagine the flavor it would impart compared to regular bread panko! 😋😋
Your recipe is always a great success so far. Thank you! One question though, it may sound dummy but to freeze meatball, do you suggest to freeze them AFTER being cooked or as raw meat? thank for your advance, in advance.
I would cook them first. Cuts down on meal prep also, cooking raw meat from frozen it might not cook evenly. You don't want to chance food poisoning. Just my 2 cents worth. All these recipes sound delish! I will be making one of them for dinner tonight. p.s. I answered because no one else did and it's been two months.
For anyone asking this now she answered below either way is fine she leaves them raw to freeze so they will retain moisture and I would think they will taste better freshly cooked too.

Those chicken meatballs look good I'm going to try them. They would go perfect with the Primal Kitchen buffalo sauce which in my opinion is way better than Franks :)

I am definitely going to make the meatballs. But pork rinds dont sound appealing at all. Any alternatives to the ground port rinds in this recipe?
If you pat your meat mixture into a rectangle, then cut the meat into rows of 5 then cross cut into 8 sections, then roll, all the meatballs come out the same without a lot of work.
Looking at your recipes, I think the texture would be more refined if you grate the onion or run it through the food processor. The finer the onion the juicier and smoother your meatballs will be. You can pulse the green pepper in the processor for a less chunky meatball. But thats just a suggestion.
Can almond flour be used instead of pork rinds.....I cannot like pork rinds, I've tried them for breading mushrooms and threw them all away.....I just can't pork rinds.
I make a Greek version with ground lamb, oregano, lemon rind, garlic, onion; the dipping sauce is tzatiki - heaven!
