Ranveer! Before frying the eggs some lil cuts should be made on the eggs, a lil salt and haldi should be mixed. Then fry atleast 5 onions to balance this quantity. After frying the onions add garlic paste a little more, lastly add ginger but not much as it could leave bitter taste after frying. Then add masalas mix and tomatoes.

Try adding gorom moshla a few mins before the cooking stops it takes the dish to another level. Also, my mother adds green peas. That brings out the sweetness in the gravy, makes it amazing to taste. Thanks for your videos. I have been binge watching them for the last few weeks and cooking up a storm in my kitchen :)
Yes I was thinking the same… either whole at the beginning or grounded at the end… better if it is made in the shil nora… my ma sometimes grind the whole garam masala with the tomato purée itself… it gives a very different taste to the gravy!!!

Just a small suggestion to make it even more authentic: you could add a little sugar while frying the onions and reduce the amount of tomato (perhaps half of what you used). Also, we usually don’t use dhaniya patta in this dish. Just sharing from our traditional way. Thanks.
Adding a little turmeric will make the eggs nicely red... a few slits on the skin of the eggs is a must... a pinch of sugar and bengali garam masala are the must haves for kosha...😊😊😊😊

It’s our regular dish. When we want to eat egg curry with pulao….we completely change the recipe and use coconut milk+onion beresta+a pinch sugar but skip jeera, dry red chili, tomatoes…..it becomes a divinely delicious dish.

Perfect!! Just try another variation sometime, I am sure u ll like the flavours. Put kalonji in foron other than jeera tejpatta n mirch. And lastly finish with crushed bengali garam masala(elaichi+dalchini) in very little amount. Just give it a try once! the aroma of slit green chilli and bengali garam masala together is just something else!!
Every video is a masterclass on its own. Your explanation of all the intricacies is perfect. Have learnt a lot from you. Sure there are other channels too but you teach cooking, others just make generic content.

Kosha goes extremely well with butter naan or just normal naan.. Mutton kosha with naan is simply divine ❤
Any kosha goes well with naan as it's made of maida and sweet...as a rule...
