    Ranveer! Before frying the eggs some lil cuts should be made on the eggs, a lil salt and haldi should be mixed. Then fry atleast 5 onions to balance this quantity. After frying the onions add garlic paste a little more, lastly add ginger but not much as it could leave bitter taste after frying. Then add masalas mix and tomatoes.

      ​​@@R-O-NHa kuch log fork yah toothpick use karte hain, kya zarurat hain, direct knife mar do, matlab cut mar do, jaldi ho jaiga. Wese Ranveer ji har video mein batate hain, shayad iss baar bolna bhul gaye
      And salt and haldi he didn't use, because unhone kaha already ki tel ganda ho jata hain.

    Kosha goes extremely well with butter naan or just normal naan.. Mutton kosha with naan is simply divine ❤

    1)In tarka we add jeera and bay leaf and no dry red chilli.
    2) we slit the eggs from four sides and then fry.
    3) we add a little bit of sugar to balance the taste.
    4) always add little bit of garam masala and ghee at the end

    Try adding gorom moshla a few mins before the cooking stops it takes the dish to another level. Also, my mother adds green peas. That brings out the sweetness in the gravy, makes it amazing to taste. Thanks for your videos. I have been binge watching them for the last few weeks and cooking up a storm in my kitchen :)

      Yes I was thinking the same… either whole at the beginning or grounded at the end… better if it is made in the shil nora… my ma sometimes grind the whole garam masala with the tomato purée itself… it gives a very different taste to the gravy!!!

    Sir u missed one thing...we bengali add a pinch of sugar also...as u have added 3 tomatoes a little bit of sugar will balance and eventually enhance the taste which will satisfy taste bud

    Looks delicious! I am Bengali, watching from Dallas, Texas. Just a small suggestion to make it even more authentic: you could add a little sugar while frying the onions and reduce the amount of tomato (perhaps half of what you used). Also, we usually don’t use dhaniya patta in this dish. Just sharing from our traditional way. Thanks.

    Adding a little turmeric will make the eggs nicely red... a few slits on the skin of the eggs is a must... a pinch of sugar and bengali garam masala are the must haves for kosha...😊😊😊😊

    YUMMY, at home, my Baba used add a little sugar after adding the potatoes and in the end some Garam Masala & 1 teaspoon Ghee.... fond memories of eating Dim Er Dalna, that's the name of this gravy, at home, with hot steamed rice....♥♥♥ thank you

    And had a Q chef u always use plain knife instead of zig zag and u also cut the vegetable very smoothly but when I tried with plain knife it slips away or kind of never cut even after rubbing again and again so I always u the zig zag knife which is smooth for me so wanted to know how do u cut the vegetable by plain knife especially tomato

    Good. Our go to dish. Sukno lonka foran e na diye o chole. Bengali food is simple but gives immense happiness. Slit the eggs before frying. I sprinkle a pinch of homemade garam masala at last.

    Love the love you show while cooking 😊
    At home we fry the eggs a bit more brown and on all sides in low to medium heat . I use two spoons to hold the eggs vertically and fry the top and bottom part of each egg by turn. The crunchy crust of the egg adds to the flavor.

    It’s our regular dish. When we want to eat egg curry with pulao….we completely change the recipe and use coconut milk+onion beresta+a pinch sugar but skip jeera, dry red chili, tomatoes…..it becomes a divinely delicious dish.

    We don't do it without garlic and gorom moshla Ranveer. Gorom moshla pasted in Sheel noda, and added in the last few minutes before stopping to cook is ~ mu me paani aagaya!

      Perfect!!
      Just try another variation sometime, I am sure u ll like the flavours. Put kalonji in foron other than jeera tejpatta n mirch. And lastly finish with crushed bengali garam masala(elaichi+dalchini) in very little amount.
      Just give it a try once! the aroma of slit green chilli and bengali garam masala together is just something else!!
