    Capsicum 4
    Oil 3 Tbsp
    Ginger 1 Tsp grated Chopped
    Garlic 2 cloves crushed
    Green Chilies 2 seeded and Chopped
    Onions 2 small chopped finely
    Red Chili powder 1/2 Tsp
    Cashew nuts 4-5 chopped
    Potatoes 2 boiled and grated
    Paneer 250 gm (Cottage Cheese) grated
    Chaat masala 1 Tsp
    Raisins 12-15
    Salt to taste
    step 1
    Halve the capsicums vertically or remove the top to make a hollow. Remove the seeds, Rub some oil and salt inside and outside the capsicum halves, and set aside for ten minutes.
    Step 2
    In a wide pan, heat oil, add ginger, garlic, green chilies, and onions. Saute till onions become translucent. Add Chilli powder, cashew nuts, raisins and fry for a few more minutes.
    Step 3
    Add mashed potatoes, and cottage cheese, sprinkle chaat masala, adjust salt and mix well. Fry for about 5 minutes in medium heat, remove and keep aside.
    Step 4
    Stuff the capsicums with the prepared cottage cheese and potatoes mix.
    Step 5
    Preheat the oven at 180°C, grease the baking tray, and roast the capsicum till the capsicums soften slightly and the stuffing is brown. This will take approx 15 mins. OR you can use a greased pan and cook the stuffed capsicums on a stovetop.
    Serving suggestion
    Serve hot with Indian or a fusion meal. Paneer Stuffed Capsicum is a very versatile dish.
