Gonna have to try removing the fat cap. I've never done it that way. As always, another excellent video Mike.

My front dial thermometer is about 40 degrees lower than my FireBoard display temp, is that normal?

@@lonestargrillz NOT the answer I was looking for. Should the pork shoulder be cooked on the top rack or the main bottom rack? OR does it not matter? Im all for experiments, but if You guys have already done it then I dont want to waste my time.

CAUTION- Some of your viewers may not know the difference between pink (Himalayan, Sea, etc.) salt and PINK CURING SALT, PRAGUE POWDER OR CURING SALT.

Mineral composition*: Himalayan salt is primarily composed of sodium chloride, with small amounts of other minerals like calcium, iron, zinc, and magnesium. Now sea salt depends what sea or ocean it comes from...

@@PaffordHomestead I believe you missed the point. At the beginning of the video when the rub is assembled the narrator says "pink salt".

I'm not going to lie, the moment you said to trim the exterior fat I clicked off. This is pulled pork man, your seasoning will stick to fat and it will render in and make delicious bark.. I've been cooking pork butts for over 10 years, I've never trimmed a single one of them and they have all turned out fantastic

If you😂 immediately clicked off when you saw the fat cap removal then you don’t get to comment on something you didn’t see, Goober
