I personally can’t stand the taste of stevia, but I do like Monk fruit. I haven’t done much with cakes using Monk fruit - I know with cookies they can get very tough, so just be prepared for that. As far as tapioca flour, you can sub any other starch (arrowroot, potato) - you absolutely don’t want coconut flour, as it absorbs a tremendous amount of liquid. Worst case I would try all almond flour, but it will be very dense. Also, any time you substitute be sure to adjust liquid level and add more or less liquid to get the same consistency.
If by sugar alternatives you mean something like Monk fruit, I do occasionally, but it does alter the quality of baked goods. My recipes are vegan and gluten free, but beyond that I focus on best taste, not necessarily healthiest.

Sure - any starch should work. I’d try arrowroot first, but you could also use potato starch.
