    Hi Abed, Thanks for making another great video and sharing your amazing recipes. I usually make my koobideh Kebob and salmon in the oven using the top rack and the broiler in winter and It turns out great. I add two sheets of aluminum foil to the pan and it makes the cleaning process super easy. I have tried even 8 skewers of Kebob at a time and keep swapping the Kebobs that are far from the broiler with the ones that closer every minute or so untill they are all cooked evenly.
    Just a word of caution to people who like to brush their kebob with extra butter is try not to use too much butter because you will have fire in your oven. This happened to me while broiling salmon I put a little extra olive oil on Salmon and almost had to call the fire department.
    Thanks again for all your amazing recipes and your sense of humor also makes me want to come back to your channel.

      The authentic Persian Koobideh Kebab only has salt and pepper and a touch of cayenne pepper but can be dropped. However, I truly believe cooking is an art and you can add other spices/ingredients to creat your own. Make it your own. You can add a little cumin and or Sumac. Thanks for watching 😊🙏

    the sharper or some say more bitter the onion the more acidic it is!
    the reason is onion picks up the sulfur from the ground, so more acidic means more sulfur = more crying when you grate, sulfur of onion and water in your eyes= sulfuric acid, therefore crying, eyes natural reaction to get rid of acid
    yellow onion usually are more acidic than red, but red onion has lot less juice
    you can use any onion you want mix your salt with it let it sit in fridge for hour or more and salt/alkaline will start to neutralize the sulfuric acid and turns sweeter

      Oh ok do you have allergy to any kind of onion? Even shallot? What about onion powder? If you have allergy to all of that then hold that off but it is not gonna be very yummy
