Birch: 11-course tasting menu for under $50 [english subtitles]

Michelin guide is coming to Russia. This year. Did you know? So, here is Birch - the restaurant that will definitely be in the guide when the St-Petersburg edition will launch.
This is, by far, our favorite restaurant in Saint Petersburg. We went there several times and every time is a revelation. It’s a fine-dining bistro, that serves great inexpensive food.
Birch: 11-course tasting menu for under $50 is actually cheaper than you might think. The 11-course tasting menu - $47. Can you imagine that? Here it is:
Tuna: persimon, tomato, yuzu
Marble beef: beetroot, truffle pesto, ponzu
Consome: seafood, seaweed, eel
Ravioli: pumpkin, coconut
Lamb pie: puff pastry, baked eggplant
Uzbek lemon: 3 textures
Petit fours: sandwich ice-cream, chocolate, hazelnut
