after about 10 mins when it just starts to cool you can use a knife to score break off lines in the candy so it will break into little squares...thats what I do...sometimes you have to wait a few more minutes and make the lines a little deeper but it does work, and when it is totally cooled you can break the candy into the little squares you made. I have seen some use a pizza cutter as well for that.

I put mine in silicon molds. Also, I did the microwave method- that only takes 9 minutes. Add flavouring of choice, pour in molds. Wait 30 minutes, unsold, toss in icing sugar, done! So simple, so easy.i made my first batch cinnamon, now to branch out in other flavours.

These pieces are huge. They should be bite-sized. My grandma cut hers into strips with scissors when it was pliable, then into bite-sized pieces. My favorite flavors were anise & wintergreen.
I couldn't use a candy thermometer so I used a regular one... I got it up to 270.... It's been 2 hours and I'm really hoping it hardens much more.... If not do you have any suggestions on what to do?

I used 1/3 of the recipe, and my candy turned out a little more sugary in appearance instead of clear like yours, could it be that I modified even if I used the proprotion?
I use a 2:1 sugar:water ratio without the syrup. Let the water and sugar come to the boil on the heat and Do. Not. Stir. The mixture. Stiring it risks the whole mixture crystallizing which happened to yours. Just let it sit on a medium heat until it reaches a couple degrees before temp then take it off, let the syrup sit in the pan until there are no bubbles and the syrup is lovely and clear, then pour, cool and smash

If you don’t want to shatter it.. you can cut it with kitchen sheers within about 1-5 mins of sitting. It actually hardens quickly.
