    after about 10 mins when it just starts to cool you can use a knife to score break off lines in the candy so it will break into little squares...thats what I do...sometimes you have to wait a few more minutes and make the lines a little deeper but it does work, and when it is totally cooled you can break the candy into the little squares you made. I have seen some use a pizza cutter as well for that.

      Or, you can use a silicon mold. I did that and it worked out great! Amazon has a great selection.

    It's one of my favorite, and a great gift put in a Mason jar,with a ribbon,to be given as gifts. Cinnamon is one of my favorite.

      I've had cinnamony tasting ones w/ the powdered sugar. Who even came up w/ this idea? Bc I have no clue where I was at, what I was doing, who I was around, but I do remember eating this on some Christmas. These candies are not an Asian ppl thing.

    Think this is a really good idea to spread it out like this because making the rock candy sticks takes 3-5 days! I’m gonna try this but with favored cotton candy sugar and see what happens!

    If you don’t want to shatter it.. you can cut it with kitchen sheers within about 1-5 mins of sitting. It actually hardens quickly.

    We make this every year, various flavors. Pour it into a powered sugar lined coke sheet, the kind with short edges. It takes at least 4 people to keep the cutting going because it hardens fast, maybe 5 minutes. We prefer to cut it. If you wait too long, you have to break it. Flavors include: peppermint, strawberry, root bear, wintergreen, lemon, any flavor oil you can buy from the drug store.

    I put mine in silicon molds. Also, I did the microwave method- that only takes 9 minutes. Add flavouring of choice, pour in molds. Wait 30 minutes, unsold, toss in icing sugar, done! So simple, so easy.i made my first batch cinnamon, now to branch out in other flavours.

    hey todd, simple question, is there anything i can use to replace the corn syrup? i have a friend who's allergic to corn, i dunno if corn syrup would set off her allergies or not but i wanna be safe is there anything i could substitute? thanks.

      kingbane2 you can buy glucose syrup it's basically the same btw its easier to find online

    Todd, how would I make this CINNAMON flavored? I haven't thought about this in years and just came upon this by accident! My wonderful great aunt Martha .made it one Christmas only and it was red and cinnamon! She was SO special like a grandma. I am sure I will figure it out one way or another.       No need, trust me it sets fast enough. Plus being in the fridge will make it sweat and even more sticky.

    I have also made it and rolls and cut it with scissors to make sure they weren’t sharp for the kids cut it while it’s still warm

    These pieces are huge. They should be bite-sized. My grandma cut hers into strips with scissors when it was pliable, then into bite-sized pieces. My favorite flavors were anise & wintergreen.

    I couldn't use a candy thermometer so I used a regular one... I got it up to 270.... It's been 2 hours and I'm really hoping it hardens much more.... If not do you have any suggestions on what to do?

    I used 1/3 of the recipe, and my candy turned out a little more sugary in appearance instead of clear like yours, could it be that I modified even if I used the proprotion?

      I use a 2:1 sugar:water ratio without the syrup. Let the water and sugar come to the boil on the heat and Do. Not. Stir. The mixture. Stiring it risks the whole mixture crystallizing which happened to yours. Just let it sit on a medium heat until it reaches a couple degrees before temp then take it off, let the syrup sit in the pan until there are no bubbles and the syrup is lovely and clear, then pour, cool and smash
