My parents were sushi chefs. Im japanese american and grew up eating stuff like this. The japanese version is called "Tonkatsu" which is panko bread crumbs and pork cutlets. Booomb lol! The sauce they use was ketchup, soy sauce, worcester sauce and some lemon juice freshly squeezed.

Thats a korean variant of tonkatsu sauce. Its a bit more sweet more like a gravy. Japanese sauce is a bit stronger and is meant to be dipped rather than what you see in the video!

안심 근막 뜯는것은 당연하고, 일반 등심 돈까스는 그냥 납품 받은거 손질없이 그대로 쓰시네요.
특별한 제품 납품 받으시진 않은것 같고, 별다른 손질은 없으세요.
다만 재고없이 잘나가고, 다른면에서 더 신경쓰실수도 있겠네요!

I have never seen fried meat getting drowned in gallons of mysterious brown sauce so the crispy fried breading gets completely soggy like having wet kitchen towels wrapped around your meat. Very clever.
