Actually as far as the mirror dimension is concerned, you're not just going to be defeated by someone if they know math. Main reason Peter bested Dr. Strange in there was mostly due to being caught off-guard and not expecting Peter to understand the environment so fast. May give them an advantage, but only to a point and would probably be circumstantial. But If you put someone into the mirror dimension and left them there, not many would even be able to get out on their own.
I believe Strange also don't want to hurt Peter, especially after he lived in so many timelines when he use Time stone at Titan, there must be timelines where they're friends. Also in Strange's eyes, Peter is just a kid
