Toshikoshi Soba is seen as a way to wash away all of the worry from the previous year and bring in new luck and fortune for the next year. Very fitting for the times to come for our Hashira.

6C/1.5L Water
4C/25g Bonito Flakes
4" Piece of Konbu
Soy Sauce to taste
+Soba Noodles as needed
Kakiaage-
100g Carrots, Match stick/Julienne
100g Onion, Match stick/Julienne
150g Potato, Match Stick/Julienne
100g AP Flour
50g Potato or Corn Starch
150-200g Ice Water (more or less depending on the flour used)

Just finished clearing after dinner. Made this for my girlfriend and her roommate for dinner and we all loved it. The flavor of the broth is nice and subtle, with a sprinkle of sesame seeds and green onions, it was so good! Added some Teriyaki sauce to the kakiaage and it was great, keep up the awesome recipes!
I got bonito specifically for my cat. I sprinkle it on his regular food sometimes.
Gandalf gets it as a treat :)

In Thailand we have a brand of ready to use, mixed flour for deep frying. My mom used it over the years. About 10 years ago, she said she she saw a recipe that said to add, I think, cassava flour to make it even more crunchy.

Fun Fact, The reason why food in Anime is so on point is because a fair few years ago a Anime was lazy and just had basket balls coloured Green for Cabbages and it was SO BAD the industry as a whole said they will do it properly from now on and studio's now have dedicated Food animation departments

Yep! I do research a lot of the more traditional stuff (Dashi, for example) and then go for it from there.

I remember eating this soba over in Japan on new years its the best!
We have bakwan, which kinda similar to the kakiage. But with more batter and thicker, so the goop kinda just shape itself when you pour it into the oil.
How about beef tendon curry from new episode of restaurant to another world? I wanna try it, but I'm afraid it will come out fatty.
That could be a fun one. Tendon is super hard to work with for me.

Can always use the guard it comes with or a cutting glove that is basically chain mail.

I had my bonito flakes in the resealable bag they came in on the top shelf of my makeshift pantry "bookcase" and my cat climbed up, swatted the bag down, tore into it and ate all of it. I just got them last week for that Ramen I showed you a photo of.

What if you put the Dicon or whatever in whiskey and put it in the freezer. Should not only cut the smell it’ll give a nice wood smell smell instead while giving the broth a little taste and aroma.
