Ingredient List
Szechuan Ramen Noodles
- 500g Bread Flour
200g Cold, filtered water
5g Sodium carbonate or Potassium carbonate
- 5g Kosher Salt
- 10g Szechuan Peppercorns
Shio Tare
- 400ml Water
50g Sea Salt
25ml Mirin
25ml Soy Sauce
- 25ml Sake
- 5g Sugar
Butternut Squash Soup
- 4# or 2kg Butternut Squash
- 1Tbl or 5g Chinese Five Spice
- Salt as needed to season
- Water as Needed
Chashu
- 2# or 1kg of Pork Belly
- 200ml Soy Sauce
- 50ml Sake
- 50ml Mirin
- Splash of Water
- 60g Honey + 60g Butter for Honey Butter
Paprika Oil
- 1TB or 5g Paprika
- 3T or 15g Oil
Toppings
- Acorn or Kabocha Sqwuash
- Poached Egg
- Green Onions

I love adding Chinese 5 spice to chia to give it an extra punch add some french vanilla creamer to it and it’s amazing

If you like heat I would highly recommend adding hot sauce to the soup broth. Spicy butternut squash soup is amazing, and because of how rich and thick the soup is the vinegar or funky flavor (if you get lactofermented sauce) can't overpower it.

Hey, i'm glad you had the same idea to do a Pumkin soup based Ramen, and that you really went all out on it.
Personally, i used a Red Onion Squash as a base, with store bought ramen, a simple Shoyu Tare, Spicy Oil, Grilled Corn, Fried Chicken, Aji-tama, and an improvised topping (wich might be the best thing in this dish), consisting of Garlic Chips, Fried Onion and Refried French Fries, all mixed up with Paprika, Chili Pepper, Cumin, Salt and Pepper.
Yeah, not really traditional, i must admit that some rest of a previous KFC meal were used. 😉

Super creative and a perfect tribute to Rengoku. Definitely going to make the butternut squash soup soon its freezing in the UK and that sounds perfect! Already considering adding more heat to the soup and creating something like a Spicy butternut squash curry-jam to use for a variant for Katsu Sando stop inspiring me chef my wallet cant take it!!!

What I've seen with all of these squashes and pumpkins, I saw from my job that they roasted it first. Not only it softens it, but it gives it a nice depth of flavour for your soup

There's this ramen place in my town that does pumpkin or coconut-carrot ramen soup for their winter vegan options. Tried both. They are delicious.

Chef, I had a butternut pasta dish once! Squash ravioli with some sort of soft cheese inside and a smooth, mildly sweet cream sauce, garnished with scallions (because those go on anything). It was subtle, like you described in this video! The pumpkin/squash flavor in the pasta made the savory and sweet aspects mesh well, the sauce wasn't overpowering, the cheese inside had nutmeg and allspice, with just a bit of saltiness to draw out more of the main focus (that being the squash noodles)... I wish I could make it for you, but it was an experimental menu item and I never got the recipe.
It was like dinner and dessert in one meal!
Definitely going to try this out with a consommé version. Looks amazing by the way!

I wanted to buy the book you mentioned in one of your early food wars reactions, I think it was "Food Bible" or something, but I don't know the exact one. I've been starting to cook more and I remember you had said that the book goes through tons of ingredients that go well together.
This is reaaaaally pushing the definition of what I'd consider "ramen". The soup would probably be a bit too sweet for my tastes, the meat's gonna be sweet from the honey (less contrast with soup), and five spice is hit-or-miss to the average Japanese palate.
With that said, if you told me that this is some unique dish from some other foreign country, I'd probably slurp it down with no hesitation. It's really creative, and I love the work you do with the food.
I was honestly surprised! It wasn't overly sweet, but yes the flavors are super off the wall.

You can take the seeds and throw them in your backyard and you'll get your own pumpkin plant 😉 or you could toast them in a pan and eat them. Delicious!
Knew the soup would be good when you took out the butternut. I use a lot of butternut puree in soups to thicken it. Gives a lovely taste.

I got the 4 in 1 pasta maker for Christmas. Can make ramen from scratch. But I want udon too.
I usually braise my chashu and that makes it really tender and amazing. You could probably braise it in the marinating liquid with more water and it would taste great.
You should try cooking with the szechuan buttons instead of or in addition to the peppercorns. Those have all that electric tingly stuff in em, way more than the peppercorns. I haven't gotten to use them so I don't know how it would handle it, but maybe grind those up and put them in the noodles instead?

i like squash soup with some cooked carrots and potatoes, then blend it all together, add some sourcream. Its a perfect combination, highly recomending. Nice video man, i love rammen.

when it comes to meat, i recommend scoring it first b4 putting them in the marinate, that way it will be juicy and more tender with more flavour on the inside

Awe nice to see someone else utilizing the poached egg method with their Ramen. It's what my husband and I do when we make our ramen although we use pre-made ramen and then just add all the toppings on top lol

Anthony bourdain once said there is no bad way to make ramen. There are few rules though to make it first use a meat based soup unless you go vegetarian, two use soy sauce or miso, three make a second soup base, four sauce on bottom, noodles next, add both soups to the bowl, mix together to get flavor you want, top with pork, nori, and the standard. And enjoy.

More out of habit to coat the squash, but you could absolutely skip that haha

the only slight adjustment i would have made is done a maple butter glaze instead of honey butter on the char siu as maple IMO is a better complimentary flavor for butternut squash than honey.
That would have been solid as well! The honey was super floral, so it was a fun flavor.
