MAROU CHOCOLATE
1. CACAO FARM
ADDRESS: Tien Giang Province
🍫CACAO WINE: Crack the cacao pods and remove the seeds. Separate the seeds and the pulp. Extract the juices from the pulp. Pour the juice into a pot and add sugar and natural yeast. Place over heat and stir. Pour into a plastic jug and allow it to sit and ferment. After 90 days of fermentation, cacao wine is ready.
💸 PRICE: Wine - 100.000 VND - $4.3 USD p/ltr | Cacao Beans - 15.000 VND/ $0.65 p/kg

2. MAROU CHOCOLATE FACTORY
🍫CHOCOLATE: The beans are dumped into the roasting machine and roasted for 25-40 minutes. The machine then separates the cacao shells from the beans. The nibs are grinded for up to 24 hours until they liquify. The liquified chocolate is poured into a machine that heats it to 50 degrees celsius and then cools it to 30 degrees celsius. The tempered chocolate is poured into the chocolate molds before going through the conveyor belt. The machine then molds it into the shape of the chocolate bar. The bars are then inspected and packaged.

🍫CHOCOLATE BARS: Mr. Lau’s Tiến Giang Dark Chocolate, Lam Dong Chocolate & Coconut Milk Vietnamese Chocolate
🍫MAROU TIRAMISU: Place Coffee biscuit on the plate and add 1 layer of coffee chocolate chantilly, 1 layer of mascarpone cream and chocolate cacao nibs. Add a second coffee biscuit, 1 small dome of coffee chocolate chantilly, 1 layer of mascarpone cream and cacao powder decoration.
🍫MUG MOUSSE: The outer mug is made from chocolate biscuit. Inside, there is shortbread, chocolate mousse, caramelized cashews, cacao nibs, cashew powder, chantilly, icing sugar. The mug is secured with chocolate ganache.
🍫MAROU CLASSIC OPERA: Use biscuit joconde for the base then add the first layer of coffee cream and a second biscuit joconde. Add the first layer of coffee ganache, then biscuit joconde, coffee ganache, biscuit joconde, coffee cream and then chocolate glacage. Finally, add chocolate triangle decorations, mini coffee macaron on the top secured with chocolate ganache and coffee ice cream with a macaron shell in the front.
🍫CHOCOLATE TART: The outside is made with a shortbread tart shell. On the inside, there are chocolate biscuits, chocolate ganache, chocolate chantilly, caramelized cashews, mini brownies with icing sugar and chocolate decorations.

It's cool that you give the man who planted those cacao beans in the first place a taste in what he indirectly makes. I was so surprised when I first found out that a lot of cacao farmers never tasted chocolate.

This is beautiful to see. Wonderful that he has finally sampled his own hard labor. Trinidad and Tobago has once gotten the title of best quality cacao in the world. Only in the last few years we've begun to see chocolate and products using it on the grocery shelves. Before almost all was exported. I guess that's how things work in the world.

Farmers don't get the appreciation and respect they deserve for producing food. It's nice that they get to be highlighted in this episode. This is my favorite in the series so far.
@Connor Ó Dubhlaoich Not true at all. Most children know farmers do a lot and deserve the respect. Its actually people in their 20s and 30s that are way more entitled so many of them just cry and bitch about everything. I hear a lot about millennials this millennials that but 99% of the time its the older people who are bitching and teaching their children to act like that. Monkey see monkey do. I have spent so long watching the news recently, its always middle aged fat women or men who get crazy entitled and believe they deserve things they really have no right to. I have no clue why people claim its millennials when so many of the people in the wrong are in their 20s and 30s.

So I guess I can't really argue with a thing u said. The gen Z as you called it don't really care about offending people quite as much mostly because we're so fed up with the generation before us trying to tell us what we can and can't say just because we may offend someone just a tiny bit. And Gen X (what you called ticktoker generation) will probably be fine. They'll be a mix between the two I think. Depending on how the millennials and gen x leave shit for them and teach them.

This cacao "spirit" may be new in Vietnam, but here in Brazil (in the state of Bahia) we also make it and drink this a lot!! We call it "mel de cacau" ("cacao honey" in English). It seems pretty sweet and acidic, but it's powerful. You can be drunk faster than you can notice! 😆😆😆😆 awesome footage, Sonny!! ❤️

I’m from nyc, and in the lower east side, there used to be an open market and my high school sweetheart and I would always visit an artisanal cheese shop, and we would ALWAYS want to buy the fancy chocolate they sold, to find out that it’s Marou!! It’s truly a beautiful chocolate
I'm so glad the farmer got to try all the yummy foods he helped make :) he seems so happy and proud of his work and that's just so heartwarming.

I know it's not the focus here, but I really love the growth of cacao pulp products that's been happening and I love how Mr. Lau is leading that in Vietnam! A few makers sell cacao pulp products (and juice!) in the US and they're all delicious. And I'm super glad you got to work with Mr. Lau and Vincent and the Marou team, they're such awesome craft chocolate makers from bean to bar! (And if you want to try more of the Marou line in the US, since you can generally only get a small set of the bars stateside, they usually bring limited edition bars and some of their truffles to the NW Chocolate Festival in Seattle and now the Craft Chocolate Experience in San Francisco!)

I had been to Marou last December, the desserts were so yummy. Miss Vietnam
I went in Feb 2020. Returned with loads of chocolates, then the pandemic started :(
I am eating my chocolate while watching how they are made, right from the cacao beans to the final products. Always appreciate how they are made, thanks always for the inside manufacturing.

I'm a highschool students right now and I remember back when I was in still in Vietnam and in in elementary school, I visited the Marou factory once and never expected it to end up on one of my favorite youtube channels
I bought many Marou chocolate bars as gifts for friends while living in Montreal, but never actually tasted myself. The packaging is beautiful. One day I will treat myself!

you we're not suppose to eat all through the seed of cacao, that's where the bitterness came from when you bite to crack it. the only edible is the white coating of the seed. we have a lot of it in my hometown. 😊 we used to eat it while we are on the top of cacao tree
@siemenssx1 no, its like fruity taste and sweet. the seed won't taste and smells chocolatey yet untill its sundried.

I used to work in a chocolate manufactory. We had pre made chocolate bases so we only „spiced“ them up but it was such a cool job. The chocolate was yummy and my work clothes always smelled like cacao.
