Snakes always love caves due to the cool conditions giving them relief from the direct heat over there. Pender Bay no longer allow drones or visits into the caves when we were there last year 😪 It's an incredible place.

With Queenfish and Trevally, try Numus. Fillet and skin the fish then cut into strips and put in container, cut shallots, cherry tomatoes, chilli, onion, half teaspoon sugar, ginger and garlic. Add white vinegar, Olive oil, lime juice and dark soy. Close container and put in fridge or esky for a hour, delicious!

With fresh fish stick with the basics, lemon, pepper salt and olive oil or butter. Oiley fish are best grilled to let that oil drip out while cooking. Add fresh tomato and lemon in the foil. Bring young potatoes with Italian seasoning to roast to get a break from rice.

One of my favorite side dishes to fish is rice and green beans with stewed onion, mushrooms and baconstrips seasoned with salt, pepper and a lot of nutmegg!
Add minced garlic to melted butter and rub all over the meat. add salt and pepper to taste and squeeze a good amount of lime juice into the container/foil. Final step, dust over the top of the meat with a generous amount of dill weed. most of the time i add cajun spices in place of the salt. Ive never tried this on a fire but if you are using an oven set to 400f (200c) and bake for 20min.
2/3 olive oil, 1/3 lemon juice, dried oregano. Mix well or shake in a bottle and pour over grilled, fried or steamed fish. You can baste as you go or just add when cooked. Goes well over the rice too. 👌 👌 👌. Of course beer battered or panko crumbed fish are delicious but frying eventually gets boring and a cleansing alternative like this is always good I reckon 👍 . Nice catch by the way 👌

Australia is so beautiful. I love how he said “you can spot a croc a mile a way”...not afraid that he would se a crock...just to be able to see one come at you. Everything in Australia can kill you. We have spiders in the US...but most won’t kill you. We don’t have piranha. Kangaroos can kick you in the face (and kill you). Does Australia have quick sand? Yup. Australia is world leading for shark attacks (and there’s not even that many of them!). Jelly fish, stone fish, giant centipedes, cone snails (look them up, their nasty). OK. With all that said....I’m saving up to get down under. People there seem awesome! Great video. thanks for posting!
I guess the most simple way to condimenting fish is just adding some olive oil and wine vinegar on top and eating the fish with Canarian style wrinkled potatoes...that is boiled in sea water with skin on....ey you're getting good at spearfishing mate...keep it up!
if you can get plantains (small bananas) especially green, smash them flat, bake them until they are crunchy (or do them in tinfoil on the fire) crumble and use them to create a crust for the fish.
roll your fillet in egg then put in panko crumbs with a small pinch of salt and black pepper cook in a pan at medium heat in oil till golden brown .good with tartare sauce or whatever as a dip
Hi guy's, great videos BTW. About fish cooking try what I call,Polynesian fish. One fish, no guts no scales. Cut fish to fit in pot. One brown onion diced One litre of thick coconut cream Two or three table spoons table salt. Everything in pot and bring to boil then simmering for further 15 minutes. Left over cream in pot ad diced tomatoes and cucumber soup next morning. Enjoy.

Another way I like cooking my Fish is in Coconut cream,with a little Fennel powder,and sometimes i add Curry powder with it,coconut curry fish,or i have some Blackening seasoning i brought online,which makes it really tasty. But my favourite way would be with Garlic,Chilli and Ginger,with a little white wine and a touch of sugar,to counter the taste.
Polynesian Raw Fish style,marinate the Fish(cut into 20 cent piece sizes)in Lemon juice for about an hour,not too much lemon juice,and turn it so it coats the fish,then squeeze out most of the lemon juice,add coconut cream,and spring Onions,and enjoy. Best way to try that,is with a small lot,so you can nail it next time,it is delicious.
UPDATE: A couple weeks after we filmed this episode a large salt-water crocodile attacked a spearo there, luckily he survived. Good reminder to be crocwise and not complacent!
Amazing video and edit. I thoroughly enjoyed. The only thing I’d question is the taking of parrot fish? They play a huge role in maintaining reef health and give it a quick google if you’re interested in why and how. Keep up the content!
Get a cast iron pan for the fire. Gut, gill and scale pan size fish. Dust in seasoned flour (in a bag) then fry in butter. Squeeze of lemon and you are in heaven. Eat the skin, face the whole lot. No waste!
Should have added to cook on coals, no flame. With skin on the fish won’t dry out, the fillet will peel off the spine. Another easy way is to gut and gill, leave scales on wrap in foil or not and cover on coals. Poke fish with knife and should tap on spine when cooked thoroughly. Enjoy!

A friend of mine was spear fishing with his mate at Cape Tribulation, they were about twenty metres apart, he swam over to him, and looked back to where he was minutes before, and there was a giant saltie. Needless to say, they bailed out real quick!

guys, try shaking the fillets in plainflour and a dash of curry powder in a plastic bag then shallow fry until golden brown..you wont be sorry.
