If EHO come and tell you someone has made a complaint and you don't have your paperwork in place, you really do stand a chance of prosecution, your hygiene rating being lowered, and even losing your business. Thankfully you don't have all that to do in the kitchen at home.....

I can understand this but when the potatoes are fried at 175 ° C, you can be sure that all the bacteria diseappear.
