I thought of that too, but here's the reality: the longer we keep our produce, the more "dead" it is... Ideally, the goal should be to consume veggies faster, not slower, imho.
My tip to keep leafy veggies fresh is, if they come in a plastic box, or if you store them in tupperware or something, put a couple of sheets of paper towel on them before putting the lid on, then store upside down. That helps to the moisture from pooling and creating gooey leaves (might work in the bag, too, on the side without holes). Just make sure to change the paper towel when it needs it.

Having grown up with a Midwestern mom who could ruin boiling water, I'm learning vegetables you don't like are vegetables you haven't learned to cook. And thank you from the bottom of my heart (and stomach) for introducing me to Indian spices! Savory flavor for miles with hardly a calorie in sight. ❤
I always though I hated Broccoli when I was a child. When growing up and cooking my own meals I decided to try it again. Turns out I just didn't like the way my mom prepared it, she always cooks it until it gets mushy and falls apart. And please do that video on how to store them properly :)

I made the 4 dishes from your cookbook for the Fall Harvest Party. The maple roasted squash and chickpeas was by far the biggest hit (all the friends in attendance were non-vegans, too)! I grew up in Italy, veggies were the primary item on our plates. I loved all veggies and fruits and never went without. The quality and freshness is not comparable to where I live now. I had no challenges eating them except when I moved to Canada. Living in a mediterranean country where it is accessible, affordable and excellent quality year round makes it easier. Moving to a colder climate like Canada where it is winter over 6 months and local produce is shorter and during winters most produce are imported and overpriced. I learned to eat them frozen, something I will admit I never had until I moved here. Currently there are local roof top gardens and I have access to fresh veggies in the winter that isn't that expensive. I am purchasing a hydroponic system for indoors as a Christmas gift for myself so I can grow all greens, herbs and small veggies fresh in my home year round.
Thank you for this very helpful video ! I love vegetables, I am lucky my grandparents had a farm here in France and I grew up eating the vegetables directly from the garden. But I think there are other difficulties : vegetables can be expensive (especially if you consider the calories you need to eat every day - sometimes eating vegetables is a luxury), and good quality ones (not talking about organic food) may not very easy to find depending on where you live.
I'd love to learn more about all of these ideas. In particular, please do videos on correct storage and ideas on use to get the most out of your vegetables, a vegetable pickling guide, ideas on how to amp up vegetable flavors. Thanks for considering.
I love vegetables more than anything. Pretty sure I eat more veggies than 90% of people. They key is to prepare them right, and play with textures and flavor cominations. One of my favorite ways to eat veggies is to roast them, and pair with a tahini dressing and a tangy/spicy crumble made with chopped nuts, pickled chili or bell pepper, and fresh herbs. Hits the spot every time! Crispy chickpeas are also nice, maybe some hummus, or pureed potatoes. I personally also love to boil them, or steam, but it's crucial to cook them just the right amount, so they're neither soggy or too firm. Hit with a bit of olive oil, salt, pepper, maybe some lemon juice and herbs, and bam! Delicious! They're also great in soups and stews, and smoothies. I could not live without veggies and eat them every single day.
Regarding storage of leafy greens/ herbs, I find that storing them loosely in a container or plastic bag with a paper towel works well to extend their life.
I am DEEPLY offended at the thumbnail's suggesting that plain broccoli isnt the tastiest dish you can have. I eat it boiled for breakfast and A LOT of it, alongside some toast and hummus. Broccoli is THE tastiest vegetable!!!! Nisha you are amazing
Pro-tip: I love using kale to make pesto. Raw kale can be hard to chew, but blend it into a sauce and it's easy and fantastically healthy to eat (and cheaper than basil). I make pestos with all kinds of greens. It's a fun, easy, tasty way to eat more greens.
Always been a veggie lover! American eaters might favour from homemade breakfast bean burrito w/ roasted rainbow veggies inside too. A familiar and tasty way to to pack in so many portions of veggies & beans to start our day with a big win!

For my family the biggest issue is that we act like you can either have a delicious dish, or a healthy dish. You are either eating pizza/pasta with no veggies, or a leafy salad of only lettuce. For the last 2 years I have been eating more vegetables than ever by just putting them into everything. Oh, morning sandwich? better add some tomatoes. Pasta with tomato sauce? better add peppers and carrots. Its barely an effort. I went from eating no veggies as a teen to being vegetarian in 2 years, partly thanks to your vids
Just a tip - spinach contains a lot of oxalic acid when raw which causes kidney stones. a little bit wont harm you of course but try to avoid eating raw spinach, especially in smoothies. either parboil it or use kale or other green instead. cooked spinach however is one of my faves!
What are your sources for this? Just because a vegetable contains a part in its composition that causes something bad doesn’t mean the food actually does that. Are there any sources actually linking the two?

I actually enjoy how long it takes to chew some vegetables, because I can eat an entire full plate meal in the time it takes someone to tell me a little about their day, so having to chew more is a good way to get me to slow down.

We quick pickled from the recipe in your book and experimented with different flavors from peppercorns, Dill, Serrano peppers and some scorpion peppers with the onion, banana peppers and cucumbers... Great tip because they all make great sides and toppers for quick dishes during the week!
Don't use spinach everyday or as one of your main sources of greens. They are very high in oxalates and increase your risk of having kidney stones if you eat them too regularly. Most green leafy vegetables are okay to eat daily, spinach is just an exception to the rule.

I've got two issues hindering me with vegetables. First, I have sensory issues, big time, so things like spinach stems? They make me gag. I just made a freezer recipe the other day that uses spinach, and I had to spend an extra 15 minutes just cutting out all the stems. Broccoli stems also make me gag. But even if I get past that...I don't know how to properly describe it. Vegetables just have this cold, green taste. That's not just the color, because I hate carrots too (yes, I said it!). What I love are what I call "warm" flavors, but that's not a spice thing. I love corn and potatoes and bread and basically all the comfort food things. You know, the stuff that isn't as healthy. -_- But I WILL say that your recipes have helped a LOT, because you really do know how to transform some of these things into something I can eat. And I love you for that!

I have beens storing my veg in compostable bags and that seems to keep them well. Also, storing washed, prepped greens in my salad spinner in fridge works well for me (wash, spin, dump excess water, cover and put in fridge). Note cilantro and watercress are more delicate so they only last a few days (instead of a week)
I can't seem to keep leafy greens regardless of what I do. I've taken to using mainly frozen spinach and incorporating it in dishes as you mention. I think the other thing that seems like a obstacle of eating vegetables is just the lack of calories. The healthier you eat the more it feels like you have to eat a massive amount of food to get the necessary calories you need.
I have a question unrelated to this video. I've noticed that you often specify flat leaf parsley in your recipes over curly parsley. Is there a reason for that, or is it personal preference? I usually just buy whichever looks fresher.

Another reason some people stop eating vegetables is because of the carnivore diet where people are told that vegetables are bad for you. It's sad because you get attacked for going against the trend.

She has said she takes supplements in other videos since it is hard for vegans to get adequate B12 without fortification of plant milk etc. also hard for people in some areas to get adequate Vitamin D etc.

Question 🙋♀️. Does blending vegetables decrease the nutritional benefits or remove the fibre? I like blending vegetables but I’m not sure if always doing that is my best option
Also with fruit in there so that’s what masks the taste of the veggies. Frozen Zucchini, frozen or fresh greens don’t chnage the taste if you are using berries or bananas etc too in my experience

I have beens storing my veg in compostable bags and that seems to keep them well. Also, storing washed, prepped greens in my salad spinner in fridge works well for me (wash, spin, dump excess water, cover and put in fridge). Note cilantro and watercress are more delicate so they only last a few days (instead of a week)

I can't seem to keep leafy greens regardless of what I do. I've taken to using mainly frozen spinach and incorporating it in dishes as you mention. I think the other thing that seems like a obstacle of eating vegetables is just the lack of calories. The healthier you eat the more it feels like you have to eat a massive amount of food to get the necessary calories you need.

I have a question unrelated to this video. I've noticed that you often specify flat leaf parsley in your recipes over curly parsley. Is there a reason for that, or is it personal preference? I usually just buy whichever looks fresher.

My biggest problem with veggies is they are expensive. It’s so frustrating that I can’t afford enough fruit and veggies for my teenage son.
And I do have a big garden to offset costs!
Storing vegetable video please!!! I ALWAYS hesitate to buy fresh (even tho I find them the most delicious to oven roast) because I’m scared they’re going to go bad before I can eat them!
Another reason some people stop eating vegetables is because of the carnivore diet where people are told that vegetables are bad for you. It's sad because you get attacked for going against the trend.
Iam wondering if you take vitamins, like a daily multivitamin in addition to getting all of these healthy veggies into your diet? My family and I are no strangers to eating lots of fruits and vegetables each day but we still take vitamins, wondering if it’s necessary? Thank you
She has said she takes supplements in other videos since it is hard for vegans to get adequate B12 without fortification of plant milk etc. also hard for people in some areas to get adequate Vitamin D etc.

Question 🙋♀️. Does blending vegetables decrease the nutritional benefits or remove the fibre? I like blending vegetables but I’m not sure if always doing that is my best option
It does not! Blending is different than juicing, which removes most of the fiber from food. Blending retains all of the fiber and nutrients.

I don’t understand how smoothies with vegetables don’t taste weird?
Also with fruit in there so that’s what masks the taste of the veggies. Frozen Zucchini, frozen or fresh greens don’t chnage the taste if you are using berries or bananas etc too in my experience
Can you use olive oil to saute your broccoli or will it go bad from the heat?
I use olive oil to cook most things.
