It's been in the 90s here and with no AC, no cook meals are great! I don't know why but it never occurred to me to make italian grinders (as we call them in RI) but we always order out for them! I found the same bread at Walmart - also not on the clearance rack 😥. Got our meat and cheese at Aldi - they had a deli plate that was mixed salami,capucola and spicy sausage. Added some roasted red peppers that we're trying to use up and for about $8 had a great meal that often costs $20 out! Love your channel and your great ideas!
Hillbilly kitchen made a kool ade pie which ALWAYS comes out great. You don't use the frozen juice concentrate. You use one package of unsweetened koolaid and the sweetened condensed milk. Mix it up and then lightly fold in the cool whip. Put in in a graham crackers crust and refridgerate. Not frozen but really solid in about a half hour. And the kool ade is only about .30 cents. Orange is also really good. Like a dreamsicle.
I make Italian sammiches too. I use ciabatta rolls, Wishbone Italian Dressing, Mozzarella slices, Pepperoni, ham, and banana peppers. I bake it until the bread is warm and the cheese is melted and then add tomato and lettuce and a bit more dressing. Soooooo good! 😋
I love this concept! It’s been so hot here that any warm food doesn’t sound appetizing. My favorite go to chilled meal is any kind of big leafy green salad with chicken, fruit and a nice poppyseed dressing. 😋
Fun ideas. My mom was not a good cook but she had several specialties. Her potato egg salad was a hit. But one of our favorite on real hot summer days she made tuna fish sandwiches with a bowl of vanilla ice cream, fudge sauce, with salty peanuts on top. We ate them at the same time. So much fun!
The taco pasta salad looks great!! I know that would be a hit here! Sometimes for salad dressing I just mix sour cream and salsa - so delicious. I recently made a nourish bowl with quinoa ,sweet potatoes and veggies and that’s delightful!😊
I have chicken ceasar pitas on my menu. Soft pita bread, romaine, fresh parm, Perdue short cuts chicken strips (or some cold grilled or rotisserie chicken) and ceasar dressing of course. Something like Wendy's had years ago. Some olives or banana peppers would be good on them too, a sliced tomato or cucumber.

I'm in Florida so I am very familiar with heat and humidity. We do a lot of salads and charcuterie meals. I make a sub sandwich similar to yours, pepperoni, ham, and hard salami, provolone cheese, chopped lettuce, banana peppers or pepperoncini. I top it with thinly sliced onions and tri color peppers that I mix with some bottled fat free Italian dressing. My kids love this!

After church on Sundays, we would have cereal sundaes ... a bowl with a scoop of ice cream, topped with cereal and a little bit of milk to get it started. Yum!!!
I hear you about this relentless heat ! I am in far north Texas and we have had NO rain for a month, plus so many many days of over 100 degrees - I have lost count ! All these recipes look so good and COOL ! We had a salad tonight with cut up chicken nuggets and lots of veggies and threw in a few Fritos for crunch - delish ! I cooked the nuggets in my air fryer so the kitchen didn’t heat up ! It is a win win dinner !
My taco pasta salad: Pasta, peppers, black beans, corn, onions and cilantro tossed with mayo, lime juice and chili powder. Super simple and always a huge hit when I take it places! For fruit salad, my dressing is maple syrup or agave, lime juice, and a touch of chili powder. I don't mind that it's a thin dressing but the touch of heat really brings the fruit to another level! Rice noodle salads are a favourite around here when it's hot - the vermicelli rice noodles "cook" so fast in hot water that it feels like you're doing nothing at all. I love them with peanut sauces in particular 🥜
These sound delicious. A local bistro in our town makes a rice salad with spinach, red onion and feta cheese and a homemade ceaser dressing. It is my favorite.

We are also having a taco pasta salad. Ours has chicken, cheese tortellini, black beans, poblano peppers chopped fine, cherry tomatoes, and cucumbers. We just had a creamy dressing with taco seasoning in it.

Yes, sandwiches , pasta salads, all are so great on hot days. I'm still planning on that peanut butter pie from a few videos back but for some reason I keep forgetting the cool whip. I haven't used that particular item for years now so keep forgetting about it, now that lemon/lime pie comes up...I gotta get a couple of tubs of that. Whipped cream might be fine but I'm sure it would not hold up in fridge without weeping. Going to the store in a day or so, might remember then. 😀
Cowboy caviar, BLT sandwiches, lots of pickles, fresh raw vegetables from the garden and macaroni salad are among the things that we eat often in the heat. I recently tried frito corn salad and that was yummo too. I want to try your taco pasta salad but I am going to use chicken and pour the dressing on before refrigerating. Gazpacho 🤤☺but the original Spanish (from Spain) way, as I have seen just about anything being called gazpacho 🙄🤣I make a huge bowl of it and keep it in the fridge for several days, absolutely nutritious, delicious and so refreshing! You can sprinkle on top small pieces of the vegetables for a bit of crunch, not everybody likes that though. Also cold shrimp cocktail salad. This I make with shrimps, maybe a bit of soft fish, lots of small chopped lettuce, avocado and cocktail sauce (home made but can also be the store bought kind). Another staple in my house is potato salad but may not be the one that you make. I make it just with cold boiled potato cut in cubes, boiled egg, tomato, tuna, green olives and with a simple vinaigrette made with olive oil, salt, pepper and lemon. Cold from the fridge it is great. You can also add onions and some bell pepper for example but i prefer the simple version.
Our go to meal when it’s so hot is, a garden tomato on toast w/mayo, garden sweet corn(we do it in the microwave for 2 min an ear) or just chips or cottage cheese & grapes. Whatever we think of, that we don’t have to cook & fills our bellies!😉
Taco salad is a go to over here. Taco meat cooked up with beans and corn, onions and peppers served over diced romaine topped with fav taco toppings like sour cream and crushed tortilla chips. We drizzle with Italian vinaigrette

I started making honey & lime dressing for my fruit salad too. Would never think those two flavors go together but they are so good. I may even try to marinate some chicken in it. Never added the vanilla pudding mix. May have to give it a try.
Down here in OKC - we feel ya!! I made black lentils, all the salad veggies in the fridge (romaine lettuce, cucumber, red onion, cilantro, and tomato) - all chopped up and dressed it with olive oil, apple cider vinegar, ground cumin and salt/pepper. YUM!! Tomorrow I’m making brown rice salad with tuna, mayo, finally chopped celery, red onion and corn (can use fresh, frozen or canned - drained of course).
I make a pasta salad with Rotini, usual salad vegetables but once a week I also make breaded chicken cutlets that are made from one chicken breast I slice thinly, drench in one egg, and I make breadcrumbs from stuffing mix. They fry quickly in a little olive oil. I let them cool and store them in a glass container. I add them to the salad when I serve it. Usually clip slices with a kitchen scissor. We add dressing to the dish when we are ready to eat because we vary the dressings as we like. The Asian style or Greek or Catalina etc all keep it interesting. ❤️😁
We had the hottest 2 days on record over here in the UK in July, it was awful and the summers just generally been boiling! I eat a lot of cheese and crackers, also love doing fafal just pre bought from the store, hummus, feta etc with flatbread. Also that lemonade pie, maybe you could do half lemon half lime for a lemon lime pie? X

Pizza roll ups - tortilla, pepperoni, cheese stick, and whatever sauce (most of the time I just dip it in salsa). It's easy and always have the ingredients.
My go to on hot days are cold pasta salad with cheese, hard boiled egg, and garbanzo beans for added protein, grilled or crispy chicken salad, and cold cut lunch meat & cheese sandwiches. We try to keep the heat outside on our grill or smoker but if we cook inside we rely on our microwave or toaster oven. I don't like using our oven or the stove top when it gets super hot & humid here in Michigan.
Here's an easy no-cook pie that's delicious although not super healthy. Freeze 2 Heath bars in the wrappers. Get a graham cracker crust and Cool Whip. Put frozen Heath bars in a dish towel. Go outside and break them apart with a hammer. Set aside 1/2 ounce and combine the rest with the Cool Whip. Put in crust and sprinkle 1/2 oz. on top. Chill until ready to eat. We call it hammer pie and kids love it.
Yep!!!! Memphis is the same.For the first summer in years, we have actually had sandwiches and chips for dinner with ice cream for desert. To hot to even start the grill. Took your advice awhile back and used my crock pot a few times. We love cold meats for lunches. Especially corned beef brisket with a pasta salad and fresh sliced tomatoes.
If there is any way you can set your crock pot outside and plug it in without critters getting to it, this will keep a lot of heat out of your kitchen.
Cold Rice Salad 3 c cooked white rice Salt 1 cup peas, blanched 1/2 red bell pepper, chopped 1/4 red onion, thinly sliced and soaked in ice water for 10 minutes (I don’t think the soak is needed.) 2 tablespoons rice wine vinegar Salt and freshly ground black pepper 4 Tablespoons olive oil - I use much less. 1 teaspoon toasted sesame oil Combine all and toss gently. Taste, and adjust seasoning as needed.
Ugh, yes! I live in San Antonio, Texas and I am SOOO over it!! I started going through my pantry today and am going to try to go through pantry and freezer/fridge items for the next two weeks instead of buying groceries! I did sign up for Upside, but they only do Gas and restaurants in my area, not groceries.
Hot here, Mindy, in Louisville, KY. Sooo hot. I just air-fried some seasoned pork tenderloin, and frozen French bread rolls, to serve over salad. All to avoid starting the oven in this heat. The air fryer puts out some hot air but it stops as soon as it's shut off and cools down quickly. Crock pot is best for summertime and I've been using that too. I've been making pasta salads, and as a suggestion, I would have dressed your first pasta salad with the dressing, chill, then add the hot taco ground beef on top at serving. The pasta and all absorbs the dressing flavors and you avoid the chilled beef you described. I agree with you there. Stay safe everyone!
Yes, you're right about the air fryer and the crockpot. The stove and especially the oven put off heat for a while after they're turned off, so I try to avoid using them as much a possible in the heat. :)
We almost beat all the heat records this summer here in the SW France.. So my absolute favorite dish now is my ice gaspacho. My chunky guac with nachos goes well too:)

Hello Mindy Mom. Just about any type of salad goes great for a budget and family friendly supper. Cold roast chicken with some fresh spinach and a touch of your choice of dressing, maybe some sliced black olives. Throw in a little chopped hard boiled egg and you're good to go.
Mindy, I have been making that Lemon Ice Box Pie for over 30 years... graham cracker pie crust, half the can of the frozen lemonade...thawed and 1and a half containers of cool whip and 1 can condensed milk... beat lemonade and condensed milk til really smooth with mixer, then add the cool whip beat just til blended, pour into 2 pie crust or 1 deep graham crust and chill for few hours. :)

Love the pie fail (eventual success). It's real life. I laughed when after everything there was too much filling for the crust. Glad it tasted good in the end. My favourite cold meal is pasta salad made with tinned salmon and mayonnaise.

I just finished an Asian sesame salad for lunch with sugar-free chocolate pudding for dessert. For dinner I'm making chicken quesadillas in the sandwich cooker
Pizza roll ups - tortilla, pepperoni, cheese stick, and whatever sauce (most of the time I just dip it in salsa). It's easy and always have the ingredients.
My go to on hot days are cold pasta salad with cheese, hard boiled egg, and garbanzo beans for added protein, grilled or crispy chicken salad, and cold cut lunch meat & cheese sandwiches. We try to keep the heat outside on our grill or smoker but if we cook inside we rely on our microwave or toaster oven. I don't like using our oven or the stove top when it gets super hot & humid here in Michigan.

Cold fruit is awesome
Here's an easy no-cook pie that's delicious although not super healthy. Freeze 2 Heath bars in the wrappers. Get a graham cracker crust and Cool Whip. Put frozen Heath bars in a dish towel. Go outside and break them apart with a hammer. Set aside 1/2 ounce and combine the rest with the Cool Whip. Put in crust and sprinkle 1/2 oz. on top. Chill until ready to eat. We call it hammer pie and kids love it.
Yep!!!! Memphis is the same.For the first summer in years, we have actually had sandwiches and chips for dinner with ice cream for desert. To hot to even start the grill. Took your advice awhile back and used my crock pot a few times. We love cold meats for lunches. Especially corned beef brisket with a pasta salad and fresh sliced tomatoes.
If there is any way you can set your crock pot outside and plug it in without critters getting to it, this will keep a lot of heat out of your kitchen.

I would love that‼️. We get up to the high 120’s. Have hit 129 quiet a few times. But 120- 122 are our summers.

Cold Rice Salad
3 c cooked white rice
Salt
1 cup peas, blanched
1/2 red bell pepper, chopped
1/4 red onion, thinly sliced and soaked in ice water for 10 minutes (I don’t think the soak is needed.)
2 tablespoons rice wine vinegar
Salt and freshly ground black pepper
4 Tablespoons olive oil - I use much less.
1 teaspoon toasted sesame oil
Combine all and toss gently. Taste, and adjust seasoning as needed.
Antipasto salad yum, Greek salad yum

I started going through my pantry today and am going to try to go through pantry and freezer/fridge items for the next two weeks instead of buying groceries! I did sign up for Upside, but they only do Gas and restaurants in my area, not groceries.

Hot here, Mindy, in Louisville, KY. Sooo hot. I just air-fried some seasoned pork tenderloin, and frozen French bread rolls, to serve over salad. All to avoid starting the oven in this heat. The air fryer puts out some hot air but it stops as soon as it's shut off and cools down quickly. Crock pot is best for summertime and I've been using that too. I've been making pasta salads, and as a suggestion, I would have dressed your first pasta salad with the dressing, chill, then add the hot taco ground beef on top at serving. The pasta and all absorbs the dressing flavors and you avoid the chilled beef you described. I agree with you there. Stay safe everyone!
Yes, you're right about the air fryer and the crockpot. The stove and especially the oven put off heat for a while after they're turned off, so I try to avoid using them as much a possible in the heat. :)
We almost beat all the heat records this summer here in the SW France.. So my absolute favorite dish now is my ice gaspacho. My chunky guac with nachos goes well too:)

Hello Mindy Mom. Just about any type of salad goes great for a budget and family friendly supper. Cold roast chicken with some fresh spinach and a touch of your choice of dressing, maybe some sliced black olives. Throw in a little chopped hard boiled egg and you're good to go.
Mindy, I have been making that Lemon Ice Box Pie for over 30 years... graham cracker pie crust, half the can of the frozen lemonade...thawed and 1and a half containers of cool whip and 1 can condensed milk... beat lemonade and condensed milk til really smooth with mixer, then add the cool whip beat just til blended, pour into 2 pie crust or 1 deep graham crust and chill for few hours. :)

You know, ceviche sounds good. My sister bought some from COSTCO a dew months ago and it was delicious with crackers.

Taco salad is a go to for us.
Love the pie fail (eventual success). It's real life. I laughed when after everything there was too much filling for the crust. Glad it tasted good in the end. My favourite cold meal is pasta salad made with tinned salmon and mayonnaise.
Last year in Oregon us was up to 116 for 3 or 4 days. Can’t remember now. AC couldn’t keep up at all! It’s 100 here today.
