Have your "budget friendly" dinners changed a little in recent months? I was able to make these meals for around $7 each, but what are your favorite budget meals these days?
My budget meals have been planned with whatever markdown meat I can find. This week it was hamburger for 2.99 . Meatloaf uses 2lbs then used the leftover Meatloaf to make spaghetti, any leftover sauce was used to make markdown bread pizza. Stretching it out as far as we can! Thanks for all of your awesome ideas and recipes 😀
Potstickers are often on sale at Costco, so I stock up those. I cook some rice in the rice cooker or heat up some leftover rice, and cook the potstickers while I boil some broccoli or peas or edamame. I make a quick dipping sauce if the potstickers don’t already come with some (soy sauce and vinegar, some garlic and sesame oil, a touch of honey if you want). Add some Kim chi on the side for a little more flavor and spice!
Hi Mindy. I have a request. Can you go to the grocery store and see what is on special that day , then devise a meal? “Manager” specials in the meat dept are meats that aren’t pretty anymore or are near their expiration time. I have to looks through videos or Pinterest to see how to cook or use some of the items. ❤️ thank you.
Mindy my friend this video came at the right time! I had surgery last week and didn’t have enough PTO to cover my recovery time but also was going to be out long enough for short term disability to kick in, not too mention the expense of the surgery. It’s been so hard since my cancer diagnosis financially and emotionally. I just put my faith in God to guide our family through the storm and the He sends me a Mindy video that I needed to see right now. For those non believers sometimes you don’t see His work because it is often a small thing you would miss if you aren’t open to seeing Him work in your life. Sorry just a small testimonial to the power of my Lord and Savior.

I love swedish meatballs as a quick dinner during the week! if I'm feeling extra lazy I just bake the meatballs in the oven and use a brown gravy packet with a little sour cream added to it and it's so good every time
In one of your videos, you mentioned that a hater/troll had told you that you should not be making these videos. This upset me and made me leave my Firestick to fire up my laptop just to encourage you to keep on making these videos! No, they do not directly benefit me, but I recommend your channel to my clients and to the parents of my clients who are struggling to feed their families yet do not qualify for public assistance. I also use your videos to help motivate me to be more frugal in my meal planning. I usually have one budget meal in my meal plan but I do weekly meal preps of all the same food for each meal of the week such as this week is scrambled eggs with peppers, onion, and potatoes in them; lunch is a nice onion soup with a giant bread crouton made from those bakery loaves that go on clearance and Wal-Mart with a small side salad; and suppers are vegetable stir fry with steamed brown rice on the side and the vegetables were two different frozen vegetable mixes rather than the more expensive fresh. The peppers and onions were cheaper fresh this week for me so I got one of each for less than a dollar total for my breakfasts. It is all about shopping the sales and clearance and store brand as you show and tout as well. Again, I encourage you to keep up the good work and keep those videos rolling as they help more people than you know. Many won't leave a message due to embarrassment, inability since they are using a firestick or other such device, or they are illiterate but can reproduce your meals since you show them. My family loves broccoli and cheese soup. Sometimes I will buy that frozen bread dough that makes a whole loaf each, and turn each one into 2 bread bowls. I started roasting the broccoli before adding it to the soup, and it really amps up the flavor.
Great video!! Last night, I made a Shepards Pie. Instead of hamburger, i used a roll of frozen RB Rice sausage i had in the freezer. I browned the sausage with diced onion, then made a sauce/ gravy with some half and half. I added about 1/2 can of both sliced carrots and green peas. The flavor boost from using the sausage was wonderful! I did add some extra garlic powder, pepper and a little salt. I sprinkled in a tiny bit of cornstarch to thicken it just a bit. I put this in the bottom of a 9x13 pan, and spread some leftover mashed potatoes over it. Lastly, I sprinkled some grated cheddar cheese, and baked it until the cheese was a little brown and bubbly. My family loved this, and it was very budget friendly! I also used some mashed potatoes to make a potato soup that was fabulous! I added the rest of the canned veggies, half and half, seasonings and two slices of American cheese.
Hack for your meatball sandwiches. I cook them in the oven for about 15 minutes so they get a little crunchy, that's optional. The real tip is before popping them in the crockpot I slice them in half. This makes it easier to place on your roll, you just place the flat side down, and they don't pop out as easily. It also makes it easier for kids to eat. 😊
OH That broccoli/cheddar soup! My son LOVES broccoli, has since he was a baby and he's 33 now. Made this for us on the coldest day of the year, 12/23/22 so he could have a hot bowl of warming, filling soup when he got home from work. I added a 1/2 tsp of Herbs de Provence along with 1/2lbs of turkey kielbasa. Sooo Good!!
Lately I've been making a whole bunch of meatballs and freezing them. After you form the balls put them on a wax paper lined baking sheet, put in freezer for a few hours til frozen. Remove and place in large freezer bag. You can grab some as needed. You can also cook them off in the oven first, if that works better for you.
I always love to see just how ridiculous the cost of living is here in California. I put the exact same items in my Walmart app. (Except the bakery items were full price) and my total before taxes was $29.07. You may find me in a store on Oklahoma soon 😁 it's all relative. Hint: Canned evaporated milk (I use fat-free) might be cheaper then half & half. Here in Southern CA, canned milk (store brand) usually is. The broccoli soup looks yummy!
I've done the opposite. Canned evaporated milk used to be cheaper in my area, but now I find Half and Half to be cheaper. I've changed out my potato soup recipe that calls for a can of evaporated milk for half and half.

Just a warning, all of the meatballs may have gone up in price and the price tags just didn't reflect the price change. The last time I was at Walmart, three different items I had from the freezer section rang up for more than the cooler tag price. I was lucky and a manager fixed it for me, but they don't appear to be changing the tags like they should or maybe can't keep up with the pace of the changing prices altogether.
I checked the grocery order app and the other meatballs were cheaper. Might be just online as I have noticed discrepancies there between online and in store
The Swedish meatballs I make call for like 20 ingredients between the meatballs and the sauce, but they're so good I can't complain much. I even have them on the meal plan for next week since I found ground pork on clearance.
I still use the Costco rotisserie chicken quite a lot and accompany it with in-season vegetables. I eat simply. Cabbage is cheap right now so I eat a lot of cabbage.

Yum! We have made that soup many times before. Last night we had grilled cheese and homemade tomato soup. So cheap and easy! The cheese was free with a Kroger digital coupon!
Oh man I feel you about the Walmart pricing labels! I’m often dubious lol I have to bring out the scan code reader in their app to make sure sometimes 😂 I love the look of that cheddar broccoli soup and so easy too! Def trying that one!
Mindy, even though I make these meals for my family too, I still watched the video to see what you do differently or had any tips. Such simple comfort food. 🙂 To cut back & save a little money, I've been using less meat for our meals by using 1/2 pound of ground turkey/hamburger when a recipe calls for one pound. I also buy boneless chicken breasts in bulk at Sam's Club and have been flattening them to make it stretch a little further. I can get 3 smaller portions of chicken that way, then I serve a little larger side dishes like vegetables or a salad. So far it seems to be working, especially for my Husband who has a larger appetite.

Here is another tip for the fries, bake the potatoes in the morning, cool them and chill them in the fridge. When you are preparing dinner, cut the potatoes, toss in OO and seasonings and bake them in oven or air fryer and they will get nice and crispy on the outside and tender on the inside. This is how I make mine, if I decide to fry them I will cut them and freeze them for an hour or two before dinner. Definitely my family's favorite way to eat fries. Thanks for another great video!

Not sure if it's cost cut idea or not but I'm going to start freezing Fresh Cauliflower and Broccoli. I bought a fresh head of Cauliflower and did it the other day. All you do is blanch it for 3 minutes (after you wash it) then take it and put in a ice bath for 3 minutes and let it dry off mostly then put in a freezer bag or whatever container you wish for freezing. (Cut into pieces before blanching). So quick and easy.

You talking about the Turkey meatballs made me think of my current problems at Walmart. The prices on the shelf are not matching the price at checkout. My store told me because of inflation and workers they aren’t able to keep up with changing the price on the shelves. It’s been very frustrating because almost half of my items have been 4cents and all the way up to 59 cents more recently! It’s been crazy. They have price matched the price on the shelf for me but I have to tell them for each one/remember/watch for it which I’ve done some but hate having to dispute it and hold up the line. Has anyone else noticed this at their store??

I've noticed that also! I was told they couldn't fix the price though(by the cashier), so thank you for that. I used to buy the chicken apple sausages. They were $3.28. The tag still says $3.28, but they rung up $4.77😕 very big difference!
This is maddening! The dang employees at my store, don't believe me and they will go the shelves themselves to see if I'm lying. I'm not going to spend an extra hour in the store. On average 7 to 8 items I buy are more than they say on the shelves. Walmart is making a killing.
My sympathies re the turkey meatballs because it seems that whatever particular item I want at the grocery store, that's the one item that doesn't have a price on it!
These sound great! Sadly. since the have to rely on grocery delivery I don't get to shop the clearance bakery racks or other other clearance areas but these are great options!

good vid i use the stalk of the broccoli for soups and stews as that where all the flavour is i also use the stalks of cauliflower then you can use the broccoli and cauliflower for some thing else and you are paying for it and most people throw it out you might as well throw yer money out.
I wonder if you've ever thought about doing budget friendly meal videos with certain stipulations (vegan, vegetarian, gluten free, etc.) Those would be super fun to watch!! Just a suggestion 😊 I love your videos!!
I think people who follow those lifestyles know better than I do how to adapt these ideas to fit their needs. I do some meatless meals and occasionally something I make is plant-based or can be made so easily.
My kids liked those, but they were messy so I wish I had cut the meatballs in half! Other than that, they were delicious. I added some pasta to what we had left over a few days l later for an easy leftover meal. :)
Mmm, Swedish meatballs!! The best I ever had were at our bank Christmas dinner for employees and retired employees 31 years ago. I couldn't get enough. And I don't eat ground meat, if that tells you anything. I think they said that they had a jam on them. Do you know anything about putting jam in Swedish meatballs? Thank you.
I don’t. Maybe 1.5C? I just know everybody ate it and there was none left over. So the pot I made and the bread fed 5 people. With the cheese and the half&half, it’s pretty rich, so it’s very satisfying with a moderate portion.
I enjoyed this video very much. I think it's a realistic price point for budget meals in the current economy. I try to keep my dinner meals around $10 a meal for the week. I do that by incorporating a cheaper meatless meal like beans or pasta twice a week and then some more expensive things other nights. It works out to around $10 a meal for the week for dinner based on everything I purchased for the week. I'd love to see some budget lunch videos. Lunch is something I really struggle with. Also some videos for feeding your family breakfast, lunch, amd dinner for $100 a week would be amazing. Thanks for all you do!

A sprinkle of nutmeg is amazing in the grazy of Swedish meatballs! They are also good on Egg noodles

in belgium, fries are double fried. once in oil and once in beef tallow. the fries are drained a bit between the processes

Here is another tip for the fries, bake the potatoes in the morning, cool them and chill them in the fridge. When you are preparing dinner, cut the potatoes, toss in OO and seasonings and bake them in oven or air fryer and they will get nice and crispy on the outside and tender on the inside. This is how I make mine, if I decide to fry them I will cut them and freeze them for an hour or two before dinner. Definitely my family's favorite way to eat fries. Thanks for another great video!

Not sure if it's cost cut idea or not but I'm going to start freezing Fresh Cauliflower and Broccoli. I bought a fresh head of Cauliflower and did it the other day. All you do is blanch it for 3 minutes (after you wash it) then take it and put in a ice bath for 3 minutes and let it dry off mostly then put in a freezer bag or whatever container you wish for freezing. (Cut into pieces before blanching). So quick and easy.

You talking about the Turkey meatballs made me think of my current problems at Walmart. The prices on the shelf are not matching the price at checkout. My store told me because of inflation and workers they aren’t able to keep up with changing the price on the shelves. It’s been very frustrating because almost half of my items have been 4cents and all the way up to 59 cents more recently! It’s been crazy. They have price matched the price on the shelf for me but I have to tell them for each one/remember/watch for it which I’ve done some but hate having to dispute it and hold up the line. Has anyone else noticed this at their store??
I checked the grocery order app and the other meatballs were cheaper. Might be just online as I have noticed discrepancies there between online and in store prices.
I've noticed that also! I was told they couldn't fix the price though(by the cashier), so thank you for that. I used to buy the chicken apple sausages. They were $3.28. The tag still says $3.28, but they rung up $4.77😕 very big difference!
Yep, and it has had me breathing fire. I am on disability so I have a limited budget. I really do not like discrepancies like that.
This is maddening! The dang employees at my store, don't believe me and they will go the shelves themselves to see if I'm lying. I'm not going to spend an extra hour in the store. On average 7 to 8 items I buy are more than they say on the shelves. Walmart is making a killing.
Potatoes need to leech that starch out. Salted cold water is excellent idea!
You could cut the meatballs in half to lay flat on the sandwiches.
Do you have a stick blender? You can use it to blend the soup, gravy, etc. I have a ricer attachment. It makes wondful mashed potatoes!😉

good vid i use the stalk of the broccoli for soups and stews as that where all the flavour is i also use the stalks of cauliflower then you can use the broccoli and cauliflower for some thing else and you are paying for it and most people throw it out you might as well throw yer money out.

I think people who follow those lifestyles know better than I do how to adapt these ideas to fit their needs. I do some meatless meals and occasionally something I make is plant-based or can be made so easily.

Mmm, Swedish meatballs!! The best I ever had were at our bank Christmas dinner for employees and retired employees 31 years ago. I couldn't get enough. And I don't eat ground meat, if that tells you anything. I think they said that they had a jam on them. Do you know anything about putting jam in Swedish meatballs? Thank you.

I don’t. Maybe 1.5C? I just know everybody ate it and there was none left over. So the pot I made and the bread fed 5 people. With the cheese and the half&half, it’s pretty rich, so it’s very satisfying with a moderate portion.

I enjoyed this video very much. I think it's a realistic price point for budget meals in the current economy. I try to keep my dinner meals around $10 a meal for the week. I do that by incorporating a cheaper meatless meal like beans or pasta twice a week and then some more expensive things other nights. It works out to around $10 a meal for the week for dinner based on everything I purchased for the week. I'd love to see some budget lunch videos. Lunch is something I really struggle with. Also some videos for feeding your family breakfast, lunch, amd dinner for $100 a week would be amazing. Thanks for all you do!
