    I watched this as I am eyeing a pro 500 mixer. This was hilarious. I make 2x batches of crust all the time and freeze half for the next weekend. Works great.

    The flour measuring is the way I do it. I find it helps reduce the risk of my baked goods drying out

    If you weigh the flour you don't have to worry about miscounting scoops. 120 grams per cup. For this recipe that would be 360 grams of flour.

    This KA 5 qt mixer is pretty quiet. Will compare it with the ,7 qt, which is DC and quieter. A spiral mixer is better - but dont knead it for 4 pizzas!

      Im happy with my mixer. Im sure you will be too. If you have an older KitchenAid don't throw it way!!! There is a market for them in any condition... The old ones are built like a tank and can actually be fixed if they break down. Cheers!

    I believe the word you are looking for is bloom. Your blooming the yeast.

    Where did you get your dough hook for your Pro500 ?

      My mixer came with the dough hook. I assume kitchen aid sells replacements.

      The dough hook came with my machine. I checked to see if the hook had a number on it but no dice…. I think the easiest way to go about figuring it out is to do a google search based on your Mixer model/. Qt size / tilt or lift style.

      Mine came with different hook and its white coated paint not like yours metal without paint

    The special word is "bloom". You shouldn't go over speed 2 for dough. You used way too much yeast for pizza dough. Sugar and oil aren't necessary either.

      Yes, bloom was the word I was looking for. The Sugar and oil are a must, they help with flavor and final "browned" color as well (Its the maillard effect)... life is too short not to make your food taste and look good. The yeast amount seems to work pretty well in my recipe, I've never tried it with less. Give it a try and see if you like it. Cheers! )
