    I love freshly milled flour recipes! I've had such good success with hard white wheat and khorasan. I also love einkorn for cream of wheat and muffins! My family is loving everything as well which makes it so rewarding!!

    This is random but you need to tap your ring around your mixer back up. Use something like the handle of a flathead or something and just tap tap tap and it will pop right back where it’s supposed to be. Also, I’ve been wanting to start milling my own grain and you’ve convinced me it’s worth the investment 😊

    Finding 2 bakeries in my area that one of them grinds their own whole grain flour daily for all of their honey whole wheat product options and the other uses locally milled fresh whole wheat flour for their traditional whole wheat 3 day processed sourdough sandwich bread from starter has been wonderful it’s the only sandwich bread we eat anymore, we have been so fortunate to not only find this local to us but to have the ability to choose to buy it over other options

    My goal for the rest of this year is to become comfortable with daily sourdough baking. 2025 goal is to start milling grains and combine the two!! Thank you for sharing this information.

    Hey Becca! This was super insightful. My question is though, if we lose 40% or so of the nutrition in a day after grinding the fresh flour, and then almost all of it in a few days, then considering the time it takes to bake a sourdough loaf for example, and then the time to consume the entire loaf, would this imply that after 3 days a homemade loaf of bread has the same nutritional value as store bought bread?

    I would have loved if you shared your favorite berries that you mill and what is your favorite berries for which type of food (bread, pasta, snacks) ie spelt, hard red wheat, kamut, einkorn, ect.

    I definitely understand the logic with the nutrient loss starting at the time of milling. However, if milled flour loses vitamins so quickly at room temperature, what effect does baking have to fresh milled or store bought flour? Does it make the nutrient loss a wash at that point?

    I’d love to know how/where to get the wheat berries. After I buy the grinder, how do I make my own flour? How do you store it? How many different flours do you use?

    Is the hard White wheat berries high in nutrition? Or just the spelt i see you using? Im considering ordering that in bulk on the nutrimill website if I get the mill

    Would the nutritional value of the baked good degrade just as quickly if you mill at home? Since you are still separating the seed layers?

      Going by grams is the best way and most freshly milled flour recipes will have them but not all. There are conversion charts out there as well
