    Dane is back this week with one of our favourite cupcakes that you'll regularly find in the Crumbs & Doilies shop.. The Bourbon Biscuit Cupcake! Now, if you're not familiar with them, bourbon biscuits are a crunchy chocolate biscuit filled with chocolate cream (no alcohol involved!) and they're absolutely delicious - a true biscuit tin staple! So we OBVIOUSLY had to cupcakeify them!
    CUPCAKES
    125g Caster Sugar
    85g Self Raising Flour
    15g Cocoa Powder
    1/8 tsp Bicarbonate of Soda
    25g Horlicks
    Pinch of salt
    135g Soft, Unsalted Butter
    2 Large Eggs
    1.5 tbsp milk
    SWISS MERINGUE BUTTERCREAM
    150g Egg Whites
    300g Caster Sugar
    300g 70% Chocolate, Melted
    360g Soft Butter
    FILLING
    Ganache:
    70g 54% Chocolate
    70g Double Cream
    65g Double Cream
    Bourbon biscuits to finish
