Ricotta is a lot more smooth than cottage. It should work due to how eggs hold stuff together but I would try it with less of it as it could "slip" and turn into goop. Thats a great idea with shroom gravy. Maybe I'd go with hummus and olives to keep it simple
Yes you can blend the cottage cheese. I usually blend all the ingredients together. I used almond flour, vanilla extra and banana extract. It taste so good :)
When I finished stirring in the dry ingredients my batter had the texture of (cooked) scrambled eggs, what happened? Had to put another egg and 1/4 to 1/2 a cup of almond milk to make it look right.
I had the same thing happen with a recipe calling for crushed pineapple and more 2 eggs....it never made a pancake...just loose almost like thick grits. Total waste of time and eggs/etc
I am Ukrainian, I have lived in the USA for 24 years. Our family still can't understand American recipes. We throw away almost 80% of ready-made food. I do not understand how you American eat this disgust. The Cottege Chees Americans make it like liquid. This Cottage cheese must have an almost crumbly consistency, NO LIQUID!!! Today I made cheesecakes and threw it away to the garbage because it's not possible to eat because of this liquid cheese.

This is very similar to pancakes I've been making for years. I use much less sweetener and I add small chunks of banana or apple. Outstanding.

Try using almond flour? And Stevia for the sweet? A little tweak here and there you can still get a protein packed jack if you try. ; )
