2kg flour
10gr. yeast fresh if dry 3gr.
900ml water
#2nd step add on the biga after 24/48 hours
400ml water
40gr. salt
3 gr. dry yeast

I made your poolish today. It is waiting in the fridge until noon.
I hope I didn’t mess the quantities as I just used 300g of flour, 300g of water, 2g of fresh yeast and 2g of honey.
Will add the remaining 700g of flour, 330g of water and 28g of salt tomorrow and hopefully it will come close to your amazing standard.
