    I love watching your videos. They are so well done. Concise, and very informative. I make pasta with kamut berries too! The same recipe as you (the smaller portion) After milling & mixing in my Kitchen Aid, I do not knead, I just bring the dough together and form a disc, then wrap and let it sit about an hour. Then when ready to make the pasta, I use the pasta sheeter attachment to do the kneading for me. (I have the original kitchen aid set). It has saved so much time! I cut my dough disk into 4 pieces, put 1 piece into the sheeter, then fold in half, put through the sheeter, repeat, repeat, repeat until it is silky, then move on through #2, #3 dial settings once on the sheeter and then flour & cut into spaghetti with the cutter attachment. Again, thank you for your videos, you are the best!

    I really enjoyed watching your video. This 75 year old grandmother got confidence to try out my manual pasta machine by listening to your video. I have baked bread for many years but have always, like you, been intimidated by homemade pasta made with freshly milled flour. I also enjoyed seeing a little head and a tiny foot occasionally.     I'm so happy to have found your channel! I just started milling, and I tried making pasta. It was a mess! It involved letting the pasta sheets dry a bit to firm up before cutting into spaghetti. I had such a hard time getting it right. It was either too wet and stuck together or too dry and wouldn't feed through the machine correctly. I love your idea of just flouring it enough to keep it from sticking together. I'm excited to give it another go. Love your idea of using the shaker for the flour, too!

    Your pep talk at the end helped me overcome fears about using my new pasta maker. Thank you! I was concerned that my spaghetti would stay stuck together when cooked. But I did flour the pasta sheet as you instructed and the spaghetti clump/nest separated just fine in the boiling water.
    I’m also glad I invested in a pasta maker instead of rolling by hand - my last hand rolled batch was much too thick.
    I’m now excited to make more pasta and to check out your other freshly milled recipes! Thanks again. 💛

    Well I just ordered the pasta attachment for my kitchen aid mixer. I have been afraid of trying pasta but your recipes are so informative and I’ve made them all and they are spot on perfect. I have a heavy duty kitchen aid mixer but it’s about 30 years old. It gets hot after kneading 5 minutes so I’m torn between a bosh open mixer or a kitchen. I noticed yours is the commercial size. Are you happy with it for making your bread recipes?

      I’ve really been enjoying it for smaller batches of 1-3 loaves of bread. As well as the attachment options. I like the easy cleanup of a kitchenaid. I haven’t had any issues of overheating with the commercial model. I had a Bosch and it’s an amazing mixer. It’s a work horse. I just found that I didn’t reach for it as often because it was just a few more steps for cleaning it. That’s a silly reason for most people but it was enough on a lot of days to keep me from baking so I ended up getting rid of it. I hear the Ankarsrum mixer is top notch tho. And I’m really tempted to try it out.

      @@Lovelybellbakes I made spaghetti tonight with your recipe. I will say that my dough never became as smooth as yours even though I kneaded it for 10 mins , but it didn't fall apart when I cooked it: 3 mins. The taste wasn't bad, but the texture wasn't as good as store-bought. Not sure if I did something wrong or what. Not going to give up though. Thanks for your video.

      I bought one and it just sat for a while as well until one day I just got up, put an egg into 100g of flour and just gave it a try with a small batch. And to my surprise it came out great!

    Thanks for this video. I just made Kamut pasta but the recipe was different and the dough was exceptionally stiff and hard to work with. The dough was the hard part and the rolling and cutting part was a lot easier than I thought…I had thought the opposite. I will try your recipe next time and also may try Hard white wheat sometime.Thanks again 🙂.

    I really like your videos too, I make your bread recipe, best ever… so for sure I will try this one. Did you try milling durum for pasta and mix it with another grain?
    Your pasta roller looks very interesting, I was using the manual marcato one, I am getting tired of it… your’s seems to work like a charm… what do you think about the Kitchenaid attachment? I have a Kitchenaid like you… and I recently bought an Ankarsrum… so maybe I will look this one up… they have attachment too…and I like your advice to flour before cutting it… I was using a pasta drying stand… it is too involving… I prefer your way… and thanks for mentioning to pour cold water to stop cooking, I agree either way you.
    It is so neat to see you work with your little one… such a nice family culture… baby fits in everyone’s routine, that’s the best!?❤️ Thank you again!

      Hi! 👋🏿. I have tried durum but I’m sure it’d be great.
      I love this pasta attachment it’s simple, works great, and it’s affordable.
      I also considered the pasta drying stand but for large quantities like I make it’s just too much work. I just let mine sit in pasta nests until I’m ready to cook it. No issues with sticking since I flour them.

    Great video! I haven’t made pasta from scratch yet. My Kitchenaid mixer went kaput about a year ago so I have been doing everything by hand 😩. I opted this year in getting an electric grain mill because I’ve had a manual one for the last 15 years (country living grain mill). It’s really hard for me to use it as often as I like and my teenage son isn’t always home to help so my new Nutrimill is wonderful!
    Wondering though how difficult it is to roll pasta by hand? A new mixer will have to wait until at least next year 😕

      I know there are videos on RUclips for rolling pasta by hand. It is possible. You can also get a manual pasta roller that does not attach to a mixer.

    I you want to make a large batch and freeze it for meal prepping, would you freeze the spaghetti or freeze it as the quarter-sized dough? Wonderful video! Thank you!

      Thank you! The easiest would be to freeze the spaghetti in nests. That way it can be cooked from frozen. But you can also freeze the dough if you’re not ready to roll it out or don’t know what kind of noodle you’ll be making with it.

    Do you think this would work with soft white or hard red? I only have Sonora and Joaquin Oro.

      It likely would not work with soft white but should work with hard red. You may just need a bit more water as hard red can be just slightly more thirsty.

      Absolutely! You can freeze the dough after mixing or you can freeze the pasta nests and cook from frozen. Just add an additional minute to the cooking time.
