Is it possible create a polygon of pins? For example to quickly create a large set of cloud pins?

No this is not possible. But if you can write python code you could do it in python (senbox.atlassian.net/wiki/spaces/SNAP/pages/24051781/Using+SNAP+in+your+Python+programs). If you want to extract the values of a polyong you can right-click on the image and select "Export Maks Pixels", then you can select the geometry you have created and the pixels can be exported.
Do you know the forum for SNAP? It is at forum.step.esa.int
Would be greate if you could use it for further questions. Thanks

    Hello
I can't open the tool to visualize spectra, neither in the toolbar nor from the "optical" menu,
I think it may be a pluggin problem (?)
I hope you can help me

It would be good to ask this in the Forum too. There it is easier to answer properly. In general, you can import CSV files in snap. You find information about it in the user help of SNAP.
