    Bro, I love your take on the onion, and ginger incorporation to the marinade. Marinaded the chicken overnight. Turned out phenomenal. I will admit I didn’t use your seasoning spice mix that went on the finished product. Went with a different recipe. It’s the sugar man, just cant do it. Also, I tried it with and without Sichuan pepper powder (already ground…. The commercial bottled kind. It doesn’t numb up your mouth like the fresh roasted and ground, but has the flavor). Night and day difference! Try it if you can find it. I got my powder a month ago while visiting Japan. I prefer to roast and grind my Sichuan pepper for dishes like mapo tofu.
    Anyway, thank you very much for your video. I learned a lot.

    For the air fryer method, you mentioned to start the cooking process in a non-heated air fryer? No pre-heating? The 12-15 mins--that includes the preheat time, or is that once temp is reached? Thank you!

      No preheating. Start from a cold air fryer. I usually do this because I want to food to cook at the same time the temperature comes up. I think things cook more evenly this way and preventing the outside from getting too brown before the inside cooks.

    Is there an alternative to sweet potato starch? I can't find it anywhere

      You can try potato starch or tapioca starch. Look for ones that have a coarse texture. I think one of the key textures of this chicken or Taiwanese popcorn chicken comes from a coarse texture root/tuber starch.

      SPICE SEASONING:
      - 2 parts salt
      - 1 part chinese five spice
      - 1 part white pepper
      - 0.5 parts sugar
      - chili powder (optional)

      @@caseycaseyacaaca they have their own kind of chilli powder, similar to cayenne, but not the same. SHU might be higher or lower than cayenne depending on the chilli.

      five spice is a common chinese spice blend. It's usually made from star anise, cinnamon, cloves, sichuan pepper, and fennel seed.

      Yeah! It's pretty fun to watch and the cooking techniques and recipes are so informational. Hopefully I can pull off a good shokugeki no soma recipe video in the future :P
      I've tried making the "roast pork" from the first episode and also the chaliapin steak rice bowl. I really want to try the Joichiro vegetarian ramen someday, too. Trying to eat more veggies :)

    You should put some plastic wrap with oil over it, or put it in a ziploc with oil when beating it. Keeps you from making a mess and keeps the chicken from breaking up too
