Air fryers are awesome. I actually haven't touched our toaster oven for a while because I just prefer to use the air fryer for most things. Are you asking if I prefer to buy bone in thighs rather than buying the boneless, skinless thighs at the store?
Did you spray oil on the breaded chicken before putting it in at 380⁰F? I wouldn't put the basil in the air fryer because it is tiny and light it will just fly around in the fryer, sometimes lodged inside the fan.😞
I think it's most commonly found in the flour area of asian supermarkets. Or you can try potato starch. Cornstarch would be my last option but it still works.

I think it can work. But, I'd mix in some egg whites into the marinade (i think including the egg yolk will make it less crispy). The extra protein and moisture will help the bread crumbs stick to the chicken more. Hope that helps!

I think I just sprayed oil on any dry starch spots halfway through air frying. Great tip about the basil! You're right.
