Miso Beef Ramen (EP.18)

  • Hello and welcome back everyone! Unfortunately here in Calgary, I see the dreaded W is coming (the cold harsh winter). With the anticipated cold weather we will be having, along with a request for some ramen, I thought this would be the perfect time to share my take on a Miso Beef Ramen. The great thing about this recipe is that you can prepare the beef stock and the marinated beef a couple of days before so that the flavor intensifies, but also helps to take some work load off on the day you want to assemble the ramen.WIth this recipe, this is a bowl of delicious ramen is sure to warm your soul on a cold wintry day.
    BEEF STOCK INGREDIENTS
    5-6 L of Cold Water
    60 g of Ginger (roughly chopped)
    4 bunches of Green Onions (with the stem and roughly chopped)
    6 Cloves of Garlic
    12 Dried Shiitake Mushrooms
    1.5-2 Kg of Beef Bones (Once the stock is cooked, if the bones have some meat remove the fat from the meat, shred it and use it in the ramen broth)
    RAMEN BROTH INGREDIENTS
    2 Cloves of Garlic (minced)
    15 g of Ginger (minced)
    30 g Fried Tofu Puffs
    50 g Shimeji Mushrooms
    1 Shallot (fine-medium diced)
    1 tbsp Soy Sauce
    1 tbsp Toasted White Sesame
    1 tbsp Sesame Oil
    2 tbsp Mirin (If you cant find this ingredient, use 1 tbsp of honey)
    5 tbsp Red Miso Paste (you can also use white miso paste)
    1 L Stock (from the above recipe)
    Left Over Shredded Beef from the Beef stock
    Ramen Noodles
    MARINATED BEEF MARINADE INGREDIENTS
    1/4 cup Sugar
    1/2 cup Soy Sauce
    1 cup Water
    1 tbsp Togarashi (Japanese spice blend)
    3 tbsp Sesame Oil
    700 g Beef Flank Plate or Boneless Short Ribs
    OPTIONAL RAMEN GARNISHES
    Soft-Medium Boiled Egg
    Toasted Sesame Seeds
    Togarashi (Japanese spice blend)
    Marinated Beef (from the recipe above)
    Corn
    Thinly Sliced Green Onions
    Nori (Seaweed)
    Shiitake Mushrooms (from the beef stock)
    PREPARATION
    1. To prepare the beef stock, start off by bringing the cold water and beef bones to a light simmer. Let it simmer continuously for 20 minutes and continuously skim off any impurities at the top of the stock.
    2. Once you removed as much impurities as you could, add in the rest of the stock ingredients. Let the stock simmer 2-3 hours.
    3. While the stock is cooking, mix in all the marinated beef marinade ingredients in a bowl, cut the beef (from marinated beef marinade recipe) into size of choice then mix the beef with the marinade. Let it marinate for at least 2 hours but preferable overnight.
    4. Once the stock is ready, remove the bones/meat, shiitake mushrooms and strain the stock in a strainer (for a more clarified stock, place a cheese cloth on top of the strainer). Discard the all the vegetables from the stock.
    5. To make the ramen broth, in a medium pot on medium heat, start by sweating off the shallots in the sesame oil for 2-3 minutes.
    6. Next, add in the ginger, garlic and cook for another 2-3 minutes (continuously stir the garlic/ginger so it doesn't burn) then add in the toasted sesame, miso paste, shredded beef and cook for another 2-3 minutes.
    7. In a couple batches, gradually add in the 1 L of stock to make sure the miso paste is well mixed and dissolved in the stock.
    8. Mix in the mirin, soy sauce and let the broth simmer for 10 minutes. At the half way mark of simmering, add in the mushrooms, tofu and any other ingredients you want in your ramen.
    9. While the broth is simmering, broil the marinated beef until it is fully cooked and has a nice caramelization on the meat (5-10 minutes each size depending how you like your meat cooked).
    10. Finally, cook a portion of ramen noodles, mix it with the ramen broth, garnish with toppings of choice and serve!
