    I made this marinade with chicken legs and thighs (had to use habaneros instead of scotch bonnets) it is so amazing! Honestly one of the best things I’ve eaten (definitely one of the best things I’ve made). Great video and recipe!

      I admire your bravery. Never had a scotch bonnet pepper, but I’ve had a habanero or two in the last few years and I can’t do it. 🥵😆

    Made this last night, but I used boneless chicken thighs instead and put them in pineapple boats with grilled pineapple on the side. Family LOVVVEDDD THE FLAVOR AND SEASONINGS!!!!

    Awesome tip adding allspice berries in with the wood! I've been doing that for a long time because I don't have pimento wood, glad I'm not the only one.

    Looks great Chris! As a South African, I love to BBQ (we call it 'braai' over there), and it is an essential part of our culinary tradition... When I'm marinating meat, I place it first in a ziplock bag, then add the marinade. It makes things a lot easier to handle and refrigerate, and also allows you to work the marinade in from the outside of the bag without getting the sauce all over your hands...

      caribbeanpot Well, if you never heard the word before, it's pronounced like 'buy' but with an 'r' after the 'b'. Forgetting the controversial history of southern Africa, there is a very interesting history of the braai. South Africans are famous for their version of the BBQ. LOVE your channel mate! I once had a GF from St Lucia and she was lovely... Much love.

    Is a beautiful recipe - Tried it already and loved it, My Grandfather is from Jamacia Westmoreland and he gave me an amazing recipe would love you to try it, Scallions, Red Onion, Fresh Garlic and ginger, 3 Scotch Bonnet peppers, Fresh Thyme, Nutmeg, Cinomen, All spice crushed, Soy Sauce, Fresh Orange Juice Or Pineapple juice, Vinegar, Dry Thyme, Fresh limes And a little rum -Boy pure heaven

      I must respectfully disagree, Chris. The cutting of the cooked food is the climax and gives viewers encoragement to watch. I'm would love to see the texture of what's cooked.

    My god those wings look absolutely wicked!! (although personally I prefer breast).Jerk chicken is one of my absolute favourites so I will DEFINITELY be trying this recipe out!!!

      the very last piece of chicken I would ever take is a breast.. luv me wings + legs with thighs attached. This marinade will work great on the chicken breast if you decide to give it a try.

    Last month, I bought two scotch bonnet plants from the local Home Depot. I see at least four mature looking peppers on it. I see jerk chicken on Monday, Memorial Day, a holiday in the USA. Thanks for the recipe!

    In FL I lived by a guy and his family and they would grill homemade jerk chicken wings almost every weekend. He would rub the wings with mustard then add the marinade. Hope this tastes like his cause I have been missing those wings.

    This looks like a great recipe! I do have pimento wood, but also like the idea of acting Applewood as well. I also think it would also be great for ribs as well.

    I remember going to a mom and pop restaurant in NY and ordered some salt fish and green bananas. I fell in love but failed miserable when trying to make it.
    Can you please make a video.

      Easiest Caribbean dish to make . First wash and peel the green bananas use lime to preserve the green bananas to prevent it from turning colour. Put some water to boil throw like a pinch of salt in it and put in the green banana in. Boil the salt fish first throw out the water ,then use fresh water to wash it out. Drain the water out then separate the saltfish with ur hands. Btw check for salt don't over boil it to take out the flavor but just to reduce the salt a lil. Chop up peppers , garlic , onion , chives , celery leaves and parsley have a bit of fresh thyme also have black pepper and just a lil bit of curry like a teaspoon. Put the pan to heat up throw in a generous amount of oil put in ur chopped up onions etc. , when its a bit soft throw in the saltfish and add the rest of the seasoning. (Chopped tomatosbis also an option btw ) Saute everything up nicely make sure there's just enough sauce not too much but enough to wet up the bananas a lil bit. Make aure the bananas cooked it should be after about 20 mins or so (not too hard not too soft ) and voila there you go.
