Been addicted to jerk chicken since our trip to Jamaica in 2008. I asked the chef at the resort what wood they used on the grill and he said it was pimento wood. Pretty expensive to buy online but a combo of apple and oak (what you used) or hickory is kind of close. Awesome looking wings!
