How to Make JERK CHICKEN at Home.

- Jerk Chicken is a popular Jamaican dish, made by marinating chicken overnight, and cooking it in a smoker over pimento/allspice wood. For most of us, pimento wood in inaccessible so this is not an authentic Jamaican recipe. It is, however, extremely delicious and will have you feeling like you're on the beach in Jamaica, with a Red Stripe in hand. Enjoy Kevin's take on Jamaican Jerk Chicken with a Trinbagonian kick!
What you need:
- 6 lbs of chicken (cleaned & washed- keep the skin on)
-6 stalks of chive/scallion
-2 heads of garlic
-4-6 pimento peppers*
-a handful of thyme
-2 tablespoons of allspice berries
-a few scotch bonnet peppers (OR habanero peppers which are traditionally used)
-1 onion
-2 inch piece of fresh ginger
-10-15 shadon beni/bandhania/culantro/recao/ ngo gai/sawtooth coriander leaves (substitute with cilantro)*
-1/4 cup of brown sugar
-1 cup of oil
-1/2 cup of dark soy sauce
-1 teaspoon of cinnamon
-1 teaspoon of nutmeg
-Salt & black pepper
For the JERK SAUCE:
-3 tablespoons of sugar
-1 cup of pineapple juice (or orange juice)
-1 cup of BBQ sauce or ketchup
-1/3 of the marinade
*- Optional

I'm Jamaican and I use pimento pepper in my jerk seasoning. We understand that making authentic jerk outside of Jamaica is difficult because of the pimento wood requirement. It's all good.

@@garyhall6294 Yes. They didn't take the skin off in the video (see 8:05). However, it is recommended that when rubbing the seasoning onto the chicken, you try to get some under the skin or at least cut a couple of slits into the chicken (with a knife) so that the seasoning really gets in there

Hey , I have a question in regards to a substitution for the allspice berries. I was wondering if you could use the ground version of allspice if you can't get the actual berries?

Can I use a mixture of ketchup and bbq sauce in the marinade (instead of one or the other)?
Also, I plan on making this, but only about 3 cups worth. How many cup measurements does this recipe produce (roughly)?

Here in the southeast U.S. We obviously don't have Pimento or Allspice wood that we have regular access to. What type of wood can we use like Hickory, Cherry, Peach, or Pecan wood that we can smoke on the coals to give a similar flavor profile? BTW; I LOVE smoking wings! And I love Jerk seasoning even though I am from the southern U.S. Tennessee, and Live in the Atlanta area. I feel that there are A LOT of similarities between Southern Soul cuisine, and Caribbean cuisine. I definitely want to explore this further. Any ideas on the wood to smoke?

We also had trouble finding it but eventually we did! Just look in the big groceries and you should be able to find it.
