Tasty Grilled Corn | Taste of Trini

- It's grilling season here in New York! It has finally warmed up, and Kevin and I have been grilling up a storm. After my recent Instagram post and story on this corn, I got lots of requests to share a video tutorial. It really is very simple to make and the end result is magnificent! The corn soaks up the spicy garlic herb butter while it's grilling and leaves you with the tastiest corn ever!
I have another version to share with you next time :)
Ingredients:
-8 Sweet Corn on the Cob (washed and dried)
-1/2 cup of Butter
-2 teaspoons of Salt (your preference)
-Black Pepper
-10-12 cloves of Garlic, minced
-2 tablespoons of Bandhanya/Shadon Beni & Cilantro, chopped finely
-3 Scotch Bonnet Peppers (optional)
Grill for 15 minutes on high heat.
Bake at 400F or 205C for 30 minutes.
TIP: Grill or bake with the husks on, or save the husks to serve your corn in.

The first time I had roast corn was at the Notting Hilll Carnival in London many years ago. Until then, like most Europeans, I had only ever eaten it boiled and dipped in butter. Grilling or roasting gives a more pronounced flavour and texture, and those fabulous Caribbean herbs and spices lift this humble vegetable to the next level. Beautifully presented!
Definitely uncle! Wish you could've tasted it the way my late Nana made it on his coal pot- just amazing! The smell of the corn grilling takes me way back in time.
I love corn so much, it really doesn't matter how I have it.........but I love how these came out and I'll be trying it out soon.

Omg your corn looks delish feel for one now..Just back from NY Queens and had some corn from key foods was great boiled so can imagine this roasted one. The sweet corn here inTrini doesnt taste anything like the ones from the US.
