I'm mexican we cook the rice like this but we do not put the jalapeno peppers in the rice
Mexican food is always a big favorite on our house. My husband is half Mexican and really loves all foods, but Thai and Mexican are his favorites.

*esquites* - Nice recipe. 👍 I use parm for elotes since it needs to be grated and stick to the cob but for Mexican corn salad I use feta if I can’t find cotija cheese.

Wow! That's a feast! I grew up in SouthTexas eating Tex Mex food. And we went on a western trip, ate lots of Mexican and Native American food, so delicious! Your family is awesome and really knows how to put on a spread. Glad you could enjoy not cooking! It's a nice break for you. Baby girl is so precious!
