I'm sorry I didn't reply sooner. I read this a few minutes after you posted it, and it made me laugh (two pints in). I really appreciated the "You had me at Dunkel" as that was entertaining, too. I'm like that at a pub when I hear less common beers from local breweries, like Dunkel, Altbier, or Rye anything.

Ignore the Corn Sugar Addition as this is simply a place holder for what the Rice Krispies add to the total fermentables. The Hops can be substituted for any clean bittering hop like Warrior, Magnum, or like. (20 IBU helps with the back sweeting of the Amoretti at 1/2 oz by weight per 1 gallon of beer.) Any really clean Lager yeast can be used, but I really like the White Labs 940 and used the same last year. The clean yeast, clean bittering hop and the recipe is really the key. I actually love the recipe as a clean Rice Lager before adding the Amoretti Toasted Mashmallow. The 3 lbs of Rice Extract Syrup is sold by MoreBeer and probably other locations. go.Bitterrealitybrewing.com/MoreBeer If you are doing Distilled or Deionized water you will want the following water profile: Simple Yellow Balanced Profile: 50 ppm - Ca, 7 ppm - Mg, 5 ppm - Na, 75 ppm - SO4, 60 ppm - Cl Ladies absolutely love this beer and their favorite word that seems to be their best way of describing it is "Delicious" which I find very funny as I hear it all the time after they try that beer. You can hear a few ladies in the Halloween video saying exactly that. I may brew this again for Summer without the Marshmallow as it is a really great Rice Lager.
I love your content. I'm a little jealous of your access to yeast and hops as I am in Alaska and temperature sensitive ingredients are harder to come by on a whimb when I need them. We have a few good homebrew supply shops here. I'm currently upgrading my system. I have a B40Pro 240V on the way. Don't tell my wife....... lol but thinking about starting a RUclips channel on brewing. Mainly focusing on brewing in rural communities, budget brewing (I know I just bought a high end system, but I've been at it 15 years), and to be honest, hopefully funding my hobby and my obsession. Any advice you have would be greatly appreciated.
First, thank you for the support. I have a niece that works in Alaska in the medical field. Not sure of your exact location in Alaska, but if you could get some beautiful views in the background, I can guarantee you will get viewers. If not for the viewing, I've learned more since I started recording every brew I do. If I forgot something about a repeat brew, I simply watch my own video to remind myself of what I did last time. Let me know if you start a channel, I'd be happy to be your first sub. P.S. I actually watched a few videos recently about how expensive food can be in Alaska and fresh veggies and meat wasn't bad, but anything prepackaged or processed was insane.
Since your kegging, why not use some Potassium Metabisulfite to kill of the yeast so the Amoretti doesn't ferment out? it is the same stuff added to wine so it can be back sweetened.
Great suggestion as I wasn't even thinking about that, but it would be an easy solution. We did think about that and pasteurization last year, but never either. I started using Amoretti back in Ales and it lasted a very long time in ales.
Could you possibly stabilize it with potassium metabisulfite and potassium sorbate before adding the flavoring? I make mead and wine as well but hsve never used that method on beer lol
Yes, 100%, but I was doing this last minute and how quickly it was consumed I didn't worry about it. With you and another person mentioning this, I probably should do a video covering this.
