I have open hotdog cart and I constantly watch the weather to see how hot it’s going to be or the chance of rain. That’s the only draw back. I am now looking for a enclosed trailer to convert to a hotdog trailer and have two locations for both carts.

He has the big feather flags visible from the road and from the parking lot. Not much else he can do in regard to 'excitement'. Management at the store determines where he can set up. They usually don't want larger trailers/trucks taking up prime parking spaces near the entrance. With a smaller cart you can sometimes set up under the vestibule at places like Lowes & Home Depot but it's still up to management. There is also often merchandise(grills/mowers/snow blowers/etc) out front so getting that spot even with a smaller cart isn't a sure thing. I agree with you on the coolers. I kept mine on low platforms behind the table which had a banner across the front so you couldn't see them but I had a regular style cart and served across the table. That brings us to the signage. Since his cart is designed for him to work on one side and serve to customers on the other, moving menu boards up higher would block both his and customers views. Many people actually like to see the food being prepped. On a food truck menus should absolutely be to the sides of the service window but I'd still set up an a-frame menu board elsewhere so customers waiting in line can see it.
