    Adhirasam is also known as Kajjaya in Kannada, Ariselu in Telugu, Anarsa in Marathi and Hindi. It is a popular sweet recipe prepared in South India during festivals and special occasions. Adhirasam | Ariselu | Kajaya is usually prepared and consumed during Deepavali festival. In some temples it is served as an offering to the gods both at home and at temples.
    Adirasam is a traditional dessert prepared by the South Indians. The jaggery syrup is known as the “Paggu or Paggam or Paaka” plays a important role while making Adirasam. The consistency should be exactly the cooked when preparing the jaggery syrup i.e., we should get soft ball like consistency. Then the homemade rice flour is added to it. And then give a mix. Dough should not be too thin, dough should be able to make a round shape ball.
    So, the ingredients used in this recipe are soaked and dried rice flour, jaggery, cardamom powder, white sesame seeds, little water, oil or ghee.
