Honestly I miss my Mom's cooking since she has passed away since Oct 2005. It's just the memories of her in my younger years in the kitchen cooking her delicious dishes always humming while cooking She was from Arizona I tried making her food but to me doesn't taste the same. I love making tortillas as well. I never made them until I started working from home. I had more time in between work and was able to make the tortillas from scratch. I found it to be very therapeutic.

I've tried making tortillas a few times but my dough never stretches. I don't know if I'm kneading it too much or not enough. Baking has always eluded me. Loved the video. Also a San antonian born and raised.
I feel like the tortilla gets to soggy and will rip easily while rolling. I feel like the sauce on top in enough. But I will do that with the authentic Mexican enchiladas. Those are yummy.

Can you make tortillas with cooking oil?
Hello Cookie Lion, I am sure you can but I have never tried it. I would think the same process, but cut down the water amount.
Why do you not dip the enchilada tortilla in the sauce before filling with cheese and rolling? Thanks
