Nowadays you go for a meal in a restaurant or hotel they tell you the veg is nice and crunchy but truthfully it is only half cooked
I was taught to make filo by brushing with melted butter and fine breadcrumbs between layers. This helps to trap little air pockets in between,and makes for a light textured filo result which never goes into a dense gluey mess.
I love your recipes and usually they turn out tasty, I made it yesterday, we didn't like it, the bottom was soggy and almost impossible to get through because of all they layers. I followed the instructions (except I used white asparagus and I baked it in a spring form) so I must have done something wrong. It did look pretty though.
They usually recommend brushing a good amount of olive oil between layers. I'm actually going to try with pesto (it has oil). That usually helps fry the philo, stopping it being soggy.
Question about your great oven recepies, when you state the temperature of the oven, is it for a conventional oven with the heat comming from below and top or is it for a hot air oven. And if there is a difference, am i right to lower the of the hot air oven by 10% so the hot air oven becomes 189 decrees.
