@@izsubs316 "good machines have built in grinders" is definitely not a true statement. There are a few decent machines with built in grinders (buying one of those would very much still be investing in a grinder, btw), but the vast, vast, vast majority of good espresso machines do not have a grinder built in.

A great grinder can’t fix a subpar machine.
Even a Breville Bambino would be a considerable upgrade
I'd also get a cheap magnetic funnel that clips on your basket. Makes WDT and dosing into the basket less messy. A lot of espresso gadgets and toys are unnecessary, but IMO a funnel is worth it just for ease and convenience. edit - forgot to say that coffee is my favourite hobby next to fighting games, so please keep these vids coming!

+1 on the funnel. Unless you have a fitted grinding cup like the 58mm niche zero cup + a 58mm portafilter, then it makes life so easy
The "glow in the dark" flavor you described is probably sourness, that could come from a lot of things including the shot taking longer. People also often describe the fruity flavor or tingly feeling on the edge of your tongue as acidic or fruity, you usually get that from lighter roasts. Great video!
Thats so awesome to see! In your older videos I saw you using a handgrinder and that kind of sent me into my own coffee-journey. I recently got a Flair for espresso. My first real espresso experience was kind of like yours in this video. I was completely overwhelmed by all the aromas and flavours :D You will LOVE your first really good shot. It's like hitting the combo you trained for days and you will just know it was right^^

Fruit notes is the acidity and a light-medium roast attribute. You might be more of a dark roast guy if you like richer chocolate flavors.

Given your tasting notes and reaction to a syrupy battery acid brew I think you're correct in aiming closer to 30 seconds to reassess the flavour profile. I would try 3 clicks coarser on your grinder then brew again, time and taste the shot then adjust in more granular increments from there. For fine tuning you can then play around with pre-infusion. If your machine lacks a method to calibrate its pre-infusion stage, or a preinfusion stage at all then you can run the pump count it out and cancel the brew then go again. If you still need wiggle room you can start making fractional weight adjustments.
For the grinding itself there's a new trend of grinding on a tilt for a more consistent particle size distribution and that will require significantly less effort too. The theory seems sound from Lance Hedrick and anecdotally it has been very consistent for me in both my SSP multimodal single dose modded super jolly and 1zpresso X-pro. Additionally, you can use the Ross Droplet Technique before grinding to dissipate static. A few options to make the grounds transfer easier for the wee hours of the morning are either using a blind shaker as an intermediary--they come with flush fitted collars--or a magnetic collar. Each of those is inexpensive, the blind shaker has the advantage of not needing the WDT step and the collar has the zen garden satisfaction and tends to be cleaner in terms of debris once one is adroit. Another couple minor purchases I would suggest are a puck screen for ease of cleanup, bottom paper filters or a card punch for making your own filters out of cone brewer papers they are a pretty massive hack for clarity and shot consistency.
Definitely add Lance Hedrick to your watchlist as the current big rabbithole channel. Hoffman is good but Lance hews much closer to the cutting edge these days since James appears to be busy with juggling all sorts of projects and Lance is lapping him in terms of recent video output and gets far more into the weeds. Tetsu Kasuya, Coffee Chronicler and Brian Quan are also great if you want to try out different brewers to explore more facets of your coffees.

Couple tips for everyone watching as well as Nihongo himself, save your elbows and stand up while tamping. You can look up a video on how to avoid barista elbows/shoulders. I have multiple 1zpresso grinders and I'd say they are all super high quality I honestly never use my niche zero anymore. However, make sure you look up the intention of the grinder as well as look up the 1zpresso charts because some of the grinder settings are more finicky than others. The J-Max might be the worst one by far (it's just confusing). Just make sure you know what you're getting into.
My preferences are external adjustment, magnetic catch cup, and 100 clicks per rotation. Enjoy!
Love using V60 as my primary method but also switch between a Kalita Wave and an Origami. V60 probably the most balanced for me
I prefer the kalita but v60 is also in my arsenal for darker filter coffee. ☮️
You are spot on with your assessment to grind coarser until you get to the 25-30 second extraction. Everything else was all groovey. Dont worry about the colour, as long as it tastes good it is good 😊
I went down the espresso rabbit hole last spring. One of my favorite drinks is simply a double shot espresso over a glass of ice and milk.

In my experience a good grinder is essential for a good espresso. Therefore I bought a comandante.Just having a 12 g lungo. Also using a needle tool, an open porta filter, a leveler and a temper. Of course you need fresh roasted good quality coffee. ☮️
I feel like Italian style coffee has a very distinct flavour and is usually roasted a lot more. If I try other blends of coffee that don't get roasted, that gets annoyingly sour.

Man, if you liked the coffee, you are doing it right.
I can tell you how I prefer: a lot of coffee ratio, like what you did. But I prefer much faster, around 25 seconds.
More coffee = more fruit flavor. More time = more bitter and more intense.

It was likely very sour.
Medium roasted beans are hard to brew well without temperature control.
While I was on my first machine I had to stick with dark roast beans, as I was able to change the temp I could brew with.
It might help for you to turn on your steam wand, without opening the steam vale. That should heat up your machine and its water more.
I would also suggest trying a 2.5:1 for medium roast on a machine without a PID.

i think the sensation you had could be called 'oily'? at that concentration there's a lot more oil to water ratio and that would explain the sensation of it coating your throat and mouth as well. as far as taste goes, trying lighter roast beans would be an interesting too because the different in taste note compares to dark-roasted would be very pronounced in espresso, have fun with your espresso journey! :)
Espresso is an exciting game. I've just ordered a similar tamper, I have no idea if I tamp hard enough/too hard, will be interesting to find out.
You don't need to put your bodyweight on it. Just press it with your arm strength. ☮️

Not sure if you've looked into it since recording this, but considering the awkwardness you had with the WDT tool, perhaps you'd enjoy getting a spinning WDT puck? They make tools that fit right over the puck with unevenly displaced needles so that when you spin it over the puck it should stir the coffee way better, also making sure it doesnt spill out while stirring
I’ve seen those. Will have a look to see if they’re available for a 51mm portafilter. Running out of cash pretty quickly though!

58 mm also means bigger amount of coffee. Many don't want to drink so much caffeine at once or prefer several smaller espressos over the day. ☮️
I recommend that you try the Lavazza ORO Espresso. It is smoother in taste and rich in body & aroma.
A supermarket coffee is too old and won't produce good crema. ☮️
