    you can alway replace vegetable oil (when frying the fried rice) with sesame oil (which I personally prefer) and instead of sautee-ing ginger, I usually do with a couple cloves of white garlic and a finely chopped onion...

      Sesame oil is actually never used to start a dish, since its aroma disappears when it's heated too much. If you want the toasty fragrance to actually come through, add a tsp at the end of cooking your dish.

    Do you generally leave the skin of the ginger on and does it give any weird flavour/texture? I generally peel it off which I find tedious.

    • @jeanniephoenix
      @jeanniephoenix 9 лет назад +1

      If you're finely mincing ginger, the skin won't give you any trouble!

      Thanks! That's a load of root off my shoulders. Never gonna peel it again!!

    Nice but fried rice on its own is far too dry! Needs a suave like curry to moisten it.

      or, you could go with a kinda half-wet, chinese vegetable stir-fry recipe (just like normal stir-fry, but you need to pour some water and a little bit more seasoning) for a watery, thin sauce.. If you know how to thicken soup with flour, you can also do that to the half-wet vegetable fried rice, making it a little bit gooey, but still delicious :)
      P.S. the gooey stir fry works best with deep fried crispy noodles, you have to boil he noodles first, and then deep fry it, and you pour the stir fry on top of it...
