    Guys. After 1 year of my previous comment. I have had Ho Fun and since its Ramadan for me, I swear to God. It was like a sun gifted me with flavourful Ray's into my mouth. I ate it so slow and graciously as the taste was divine

    We call it beef kway teow here in Singapore! We also have char kway teow which is our local favorite dish along side chicken rice, cili crab and many more!

      We often do leave it on! Our mum always does because peeling can be a bit of a faff sometimes. As far as we can tell, it doesn't really change the flavour (especially if you have firm young ginger). Having said that, for aesthetic purposes if can be quite nice to peel it off :)

    Great recipes, I've subscribed. Do you have more tips on getting wok hei at home besides just getting the wok as hot as possible ?

      +ProfessorJones7 Wok Hei= smokey flavor is basically the burnt food that sticks over time that turns into carbon over time.... the impurities get burnt out leaving carbon, the resulting smoke over high flame will give that smokey flavor to food. High flame is very difficult to get over home based stoves, not enough BTUs - most home based stoves about 10-15,000 BTUs. Restaurant quality high flame is what you want - about 100,000-200,000 BTUs. Think "jet engine blast" kind of heat. That is how Woks gets black... never scrub this off. Must rinse with water, never use soap or other chemicals on a seasoned wok. Cold wok has closed pores, soap gets trapped in there and heat will open pores and release soap aroma and discolor food in a bad way.
      After rinse with water, use high temp oil such as peanut oil turn flame to high and maintain until it starts to smoke then start cooking... always cook meats... they cook longest, then veggies and finish up on sauce... depends what you are making. Hope this helps.

    My favourite Cantonese dish (along with wonton noodles). Unfortunately, I don't have a gas burner in the kitchen (electric stovetop instead) so there's no way I can get it to work at home. Will need to go out for a decent one :)

      BF31 can still do it with a flat base wok and set on high temp. But it won't be instantaneous as gas.

    I have a concern about the plastic tray, the one which boiling water was poured into with the flat rice noodles. It could be hazardous for your life due to BPA(Biphenol-A) present in plastic. I'd avoid anything hot with plastic, instead I would use glass, metal, wood or ceramic tray.

    I absolutely love your recipes, but I have a question. I live in the United States and I am not familiar with Dark soy. Could you please tell me a little about it or another name for it. I would love to make this recipe and your potstickers as well. Thank you ladies!!!!!

      Hi Danielle, and thanks for your question! Dark soy sauce is (as the name suggests) much darker in colour than light soy sauce. It is also thicker (the really good stuff is syrupy) and more full-bodied in flavour, though far less salty than light soy sauce. We generally use it to add a bit of colour, but you usually don't need loads of it because it is really very dark (especially the Lee Kum Kee brand, which is excellent). Sometimes it can be labelled as 'thick soy sauce', but you're more likely to come across 'dark soy sauce'. If you're at an Asian supermarket you can ask the staff for 'lo chouw' and they should be able to point you in the right direction. Hope this helps!

    Awesome, made this today. Except I couldn't help adding baby corn and some broccoli. I usually marinade the meat in just light soy, rice wine and sesame oil along with grated garlic and ginger on the good old microplane! :)

    Moving aside all the comments about your lipstick & how gorgeous you both are...can you please improve the audio? It sounds as though you are talking into a tin can. I like your videos & recipes very much, but it's difficult to follow because the audio is so poor.

      Hi Diane! We filmed that in our old flat that had very high ceilings so it was especially echoey! Hopefully our more recent videos are better :)
