I generally skip the cooking portion of your videos because I know I will be hungry by the end of your video. Sure enough I watched the whole video and I'm starving now. I wish I lived near salt water so I could have more of a variety of fish to eat. In central Virginia and southern Virginia you have 3 choices Brim, Crappie and Catfish. Every once in a blue moon I will catch a Walleye but they are not vary common where I live. I love watching your videos and I always learn something new. Keep up the great work you two and stay safe.

Jake N they taste better up north here in the colder water. We see them offshore Maine coast but don’t fish them there numbers are booming because they follow your river herring up and wait for them to leave the fresh water where they spawn. It’s a huge boost for ecosystem since herring stocks are very low. Same happening in Maine river herring come back. Aka alewives we call them

Dave Wylie believe it or not they are like bluefin tuna. They just go with current and warm/cold water breaks. We see it commercial fishing the Gulf Stream and seen um as far north on George’s bank.

We seen mahi-mahi your big mackerel all 100 miles from Maine coast. But our feed has come back to huge numbers maybe they are chasing feed like the tuna or it has to do with Gulf Stream breaking of coming north instead of east north east
Dave Wylie did you lose your job when Florida banned gill net and long long line fishing. So the shark population exploded and is changing the ecosystem it’s killing our herring stocks. I got several Florida state and federal permits for their but they don’t want us foreigners fishing Therese to long line their until the day it closed chase fish from Maine to Bahamas canyon

Love and enjoy watching all of your videos. Just wanted to give you a little tip how to avoid getting "dumplings" in your sauce. This is a mistake that many people make: they add all of the liquid to flour (or roux) in one step and then there is not enough friction to breakup the lumps of flour. If you turn the heat down and add only two thirds of the liquid first and try to stir it, your mixture will become very very thick, but because of this all lumps will break up much faster. And then slowly add the rest of your liquid in small portions while stirring it. This will gradually dilute it without forming lumps. And then turn up the heat. I will definitely try your recipe for my bonito next time I cook it. 👍
In NC we call False Albacore Fat Alberts or Bonit(A) . Atlantic BonitO are called Bonit(o). Atlantic Bonito is actually a member of the mackerel family (hence the teeth) and is my all time, number one, prized meat fish. BEST sashimi I have ever had. It is a true delicacy. Sweet, mild and tender.

FYI: 300 Years Ago TODAY: The first seasonal (March-April) Japanese Pacific "Katsuo" - bonita - catch was just three fish at the Edo Era Fish Market (modern Tokyo today ; - ). The Shogun (War Lord) of the day got the 1st one, some rich man bought the other two for a sum equal to 1.5 years salary for a domestic worker. EASILY THE BEST CATCH of THE DAY ; - ) G BTW, back then, the Edo fishing fleet had limited offshore scope; so they had to WAIT for the Katsuo migration to come within their reach each Spring!!! YUM! 1st time I had it in Tokyo (April 1991), the blue skin was ON and the red meat looked like BEEF! I was WAY PUZZELED - BUT LOVED IT!!! Afterwards, my Tokyo Home-stay family NEVER FORGOT how I LOVED that sashimi AND always apologized profusely when I would visit: "So sorry, katuso ari ma sen", e.g. "Sorry, bonita's not in season right now"!!! Great vid! Common here in Cali as Pacific Bonito, catch them off piers in Summer/Fall when they come up from Mexico, great on ultralight tackle (down to 2lb test LOL). As others said, bleed then while alive and also ice them immediately to keep that tuna-like sashimi texture and translucency. Big ones produce a lot of meat but the smaller 1-3 pounders taste better =)
Bonito trophy fish,,, looks like you were in the southern gulf when the bonito fish were running. Here in So Cal a lot of guys consider it a trash fish, but if bleed and kept on ice it is bomb!! I like to grill and smoke it. It can good too.
Interesting take on Piccata, since it's normally butter, white wine, lemon juice, garlic, and capers. I would at least add a little lemon juice into that to add a little brightness to it.

Underrated. Considered a trash fish? Aggressive striker. Hard fighter. After catching. Bleed out. Rip gills. If not meat gets mussy. Like a banana. When prepping. Remove belly strip. All pin bones. Now have good quality steaks. Enjoy.
Here in Cali. Bonito runs from big boils to deep water strikes bone fishing is on our minds. Run a splash float. Run 2 green flies under it. Rip it across the surface b ready

Pacific bonito are really good sashimi. They are kinda rare in Costa Rica but they are a treat when caught
