"Pink-Coloured Pancakes," 1829 1 large beet 4 egg yolks 2 heaping tablespoons of flour 1/3 cup of sugar 1/3 cup of cream 1 tsp nutmeg A dash of brandy 1 tsp butter Boil your beet until it is tender (roughly 30 minutes). It is done once a fork easily goes through it. Remove from your hot water and allow to cool. Once cool to the touch rub off the skin with your fingers. Mash the beet well until smooth in a bowl. To this add your egg yolks, cream, nutmeg, flour, sugar and brandy. Mix well. Melt your butter in a skillet on medium heat. Pour in a bit of the batter, forming a round pancake. Allow it to cook for 2-4 minutes before flipping. Once firm and solid on both sides they are done. They cook quickly so be sure to check on them often. *Note: cup sizes in regards to cooking were not standardized in the early 1800s. Because of this when a recipe from the early 1800s calls for 1 cup of an ingredient that does not equal to a modern measuring cup's worth. In reality it would have been equal to a small drinking glass, which to them was quite literally a cup of something. The interpretation of what a cup meant varied greatly from cook to cook.

I used to use the water from the beets or onion skin to colour my Easter eggs (pysanky). Also when we didnt have money for makeup or as a kid wasnt allowed to wear it, I would use beets for my cheeks and lips to add colour. The best thing you can do with beets is make borscht though! Really enjoyed this episode :)

The metal plates you use remind me of the salad bar plates at Shoney's. They are just like the ones you use. They keep them refridgerated so the plate is cold when you go to the salad bar.
One of the few things I liked about the utopian society of the Shakers was that they had (in my opinion) beautiful painted seed packets and sold lots of seed way back when. I assume if you google their packets you may see some of the pumpkin and other veggie designs. It was always so "Thanksgiving" like where it made you think of Pilgrims and all that way back when stuff. Anyway, was inspired to share that when Justine was carrying the pumpkin.
Our cat is 100% Black no white on home at all. His name is Loki and he just turned one. We found him when he was a 4 week old kitten. Black.cats are lucky

I like beets, too, although not sure about in pancakes. 😂 My historic interpretation is 1822 California Missions so I am fascinated by your technical part of cooking but am limited to Spanish/Mexican cuisine for volunteering except at home. 😉 But perhaps I could do the boiled beets with cheese and bread, which are all period authentic. Will have to try that at home for a taste test. Thanks!
