I was a butcher for 35 years, 26 of those running a market crew for HEB, I have been helping a friend who owns a processing center in cross plains TX 3 days a week and looks at what's hanging on hooks in the cold room and the meat in the retail counter it's easy, 1st of all too see that u have quality beef and quality cutters.
