Brown butter is essentially cooked butter where the fat solids inside are reduced while ghee is clarified butter where the fat solids are removed. Ghee is kinda like butter oil while brown butter is like cooked butter
According to the happybutter webpage ghee and brown butter are more similar than ghee and clarified butter. All three types are cooked, but ghee and brown butter are cooked until the milk solids turn brown. The browned milk solids are then strained from ghee. Which means that ghee and brown butter have a nutty flavour that clarified butter doesn’t.

I took butter from the grocery store, turned my pan on high, butter in cold pan. Allow to heat to temp and stir frequently. Should be done in about 5-10. Don't sit around for 45 minutes stirring. Butters cheap. Go to costco and get 5lb for $$14 and practice. You can't fuck it up if you are constantly stirring and watching. (Stoves may vary. Maybe try 8 first)

If you have a gast stove keeping it at the lowest temperature possible is safe enough to brown the butter without using residual heat, that's how I do it comes out perfect every time!

I hope you and your son get well soon!! Keeping focus on things you want to do are important during the healing process, especially since you have to isolate yourselves during the time you're sick. I had Covid-19 shortly after the pandemic began in 2020 and was hospitized for 92 days. My focus was getting back to work. I lost all my strength and had to learn how to walk again. It took me 9 months to return to work, but I did it. I remember while I was in ICU telling the doctor I was going back to work, so when could I do that. I'm sure he thought I was crazy but it was my goal and I did it!! So keep positive and you'll be up and going soon!! ❤️❤️❤️

Yes, my Mom could not walk too. The drs told us to not expect anything. My brother and I were saying, THEY WILL WALK OUT OF THIS PLACE! They will be ok! They will receive a healing from the LORD!!! My brother was critical too... a week later. So I was the healthcare proxy for all three. They all made it and are so healthy now. Home!!! My Dad who is 85, plays basketball! They are both fit!!! almost anything you would use regular butter for. it has a toasted, nutty flavor. Ive used it for steaks, topping( like on baked potatoes) and desserts :D
With Ghee, or clarified butter generally, you need to strain out the milk solids (the caramelised bits in the vid) and you generally avoid browning it. With brown butter you specifically want those sweet, nutty nuggets of yum. In fact, you can add milk powder to the butter to increase the amount of caramelised solids you get 😋
You should not mix the butter while same is melting. Leave it until the butter becomes transparent. Then take it from oven and leave it untill it gets cold then carefully put it jar but dont shake pan. You can make cookies from remaining of butter in pan.
