- crawfish Mac & Cheese is only one of many dishes you can use left-over crawfish in. This recipe brings back such wonderful memories for me of harvesting crawfish from our creek and making the crawfish "go further" by making them with the crawfish. It was kind of serendipitous in that this dish brought just as much comfort and deliciousness as lobster Mac and Cheese. We have this every summer after our crawfish boils and this dish never ever fails. How could it with the different cheeses, pasta, and creamy buttery sauce. Hope you'll give it a try.
