Love watching your cooking videos! That is a beautiful turkey... everything else looks great too! For pie crust... leave an extra inch when trimming, fold excess under then crimp. When crimping press down on rim, this will help keep crust from "slumping" and will give you a deeper crust too. Also, if you refrigerate the crust after forming and before filling and baking, this will help too.

I always dry brine my bird. Last 3 years I’ve made a 7 lb Turkey breast in my Instant pot, and brown the top in the oven or air fryer. We usually have Turkey wings too but we didn’t get to the right place too buy them this year. I made my moms stuffing, barefoot contessa make ahead gravy and asparagus wrapped in bacon. I meant to make creamed onions but forgot. One of the great things that I can get free at my job are plastic buckets. We go through icing like it’s no tomorrow so there are buckets every day. I can find coriander in any store around here. I live in the middle of nowhere and I can find it. Too bad you can’t. That dip looks so good. I have to try that for New Years. Hubby would love it. One thing I have learned about at my job is citing gloves. So you know what they are?? Gloves u wear when cutting things. You should get a pair. I cut my finger badly at work without them. I stopped basting years ago. It just makes the bird take longer to cook because you lose the heat every time you open the oven. I just dry brine, wash it off, use the cheesecloth soaked in butter and it brown beautifully. It also takes half the time to cook. thanksgiving is not the time to experiment with new things. Relatives and friends want the tried-and-true. I learned that lesson many years when I made a crystallized ginger pumpkin pie from Gourmet Gourmet Magazine for dessert. No one ate it but they ate the apple pie that my MIL brought (Mrs Smith’s from the freezer, her favorite.) Same thing happened with a mile high apple pie I bought from a local farm stand. No one ate it except me so I brought it home and ate it. Always make the family favorites. You can’t go wrong there.

It’s dressing here in the south (GA) but we make it with cornbread not bread cubes.

My grandma would take her leftover pie dough and put cinnamon sugar or strawberry jam and roll them up and called them pie-diddles 😉😉
