You do not have to add the eggs to this mix at all! I make this all the time and it rises beautifully if the angel cake pan is really really squeaky clean, no oil etc.. ido like that you added the pudding mix. I usually only add the crushed pineapple and it's yummy. Ohhhh, and I have a long neck coke bottle to hang the hot pan upside down to cool on. That's what keeps it so airy high.
